Summer is upon us, and the 4th of July is quickly approaching. Which has had me thinking lately about watching the 4th of July fireworks as a kid ...and how easy it was for our family to watch our town's fireworks celebration. Yes, we were very fortunate and truly couldn't have had it much easier at all. All we had to do was ... step out on our deck!

Seriously.

No driving. No schlepping of lawn or camping chairs to sit in. No parking spot hunting. And no waiting-forever-for-the-parking-lot-to-empty after the fireworks were over.

See, I grew up in a small town in Vermont that was pretty much a valley in the center, surrounded by hills on each side. Our town's fireworks were set off from the car racing track (a small quarter-mile speedway that I loved going to every summer on Thursday nights!) that sat atop one of the town's hills.

And our house?  Well, it just so happened to be located on the opposing hill to the race track ... with our deck offering a perfect view of the gorgeous fireworks as they exploded over the treeline.

Watching fireworks doesn't get much easier than that, does it?

Now these Red, White, and Blue Strawberry Cheesecake Bites may not be quite as easy as simply stepping out on the deck to watch the fireworks. -- But they're pretty darn close.

These fruit-based sweet treats are always a hit! Whip up a platter, and watch them disappear in no time.

Red White & Blue Strawberry Cheesecake Bite Ingredients:

It takes just 5 ingredients to make these tasty little bites. To whip up a platter of these beautiful and tasty red, white, and blue treats you'll need:

  • Strawberries - The star of these tasty little bites. Halved strawberries create the base and the red component of the strawberry cheesecake bites. Look for large, fully-ripe berries for the tastiest result.

  • Blueberries - Serve as the blue component of these red, white, & blue bites. Medium-sized, plump, fully berries are best both for flavor and for fitting well atop the strawberries halves.

  • Cream cheese - The base of the cheesecake topping that creates the flavorful white component of the berry bites. We recommend using regular, full-fat cream cheese, as it creates a firmer-textured topping that pipes and holds its shape better than one made with reduced-fat cream cheese.

  • Confectioners' sugar - Sweetens the cheesecake topping.

  • Almond extract - Nicely flavors the cheesecake topping. Vanilla extract could be substituted, if you prefer.

How to Make Red White & Blue Strawberry Cheesecake Bites:

Red White & Blue Strawberry Cheesecake Bites aren't just tasty and make for a pretty presentation on a platter, they're pretty easy to make, too.

To whip up a platter full, start by cutting some large strawberries in half.  I like to leave the leaf cap on and just cut right through it. -- Because (one) it looks pretty, and (two) the leaves act as a little "handle" to hold onto when picking up and eating these tasty little bites.

Then place the strawberry halves, cut-side-up, on a platter.

If you have a berry half that doesn't sit level, cut a teeny tiny slice from the rounded platter-side of the strawberry to give it a flat spot to sit upon.

For the cheesecake topping, mix together a block of softened cream cheese with a little powdered sugar and a small touch of almond extract. Stir these together until the mixture is smooth. -- But don't overmix them, as the cream cheese will become thin and too runny to hold it's shape on the berries.

Chill the cream cheese mixture for about 15 minutes to set just a bit. Then pipe some on top of each strawberry half. Top the piped cream cheese with a couple of fresh blueberries.

Red White & Blue Strawberry Cheesecake Bites

Whip up a platter full of red, white, & blue Strawberry Cheesecake Bites for an easy and tasty 4th of July ... or any time ... treat.

Ingredients

Instructions

  1. Place softened cream cheese, confectioner's sugar, and almond extract in a small bowl; stir until well combined and smooth. Chill for about 10 to 15 minutes.
  2. While cream cheese mixture chills, rinse strawberries and pat dry with paper towels. Leaving leaves on, slice each strawberry in half lengthwise and set aside on a plate or serving platter with the cut side up. (If strawberry halves do not sit level on the platter, cut a very tiny slice from the rounded side of the berry half to create a flat spot for it to sit upon.)
  3. Spoon cream cheese mixture into a piping bag (I use a disposable piping bag) fitted with a large star tip. (If you don't have a piping bag, you can use a zip-top baggie. Cut off one of the bottom corners of the bag and use it to pipe through.)Pipe cream cheese mixture onto each of the strawberry halves.
  4. Top each strawberry half with two blueberries. Serve immediately or refrigerate for up to about 3 hours.
