To me, one of the world's most perfect flavor matches is chocolate and nuts.  

Give me a few chocolate covered almonds, or chocolate covered pecans, or a handful of cashews and chocolate chips mixed together ... and I'm in heaven.  When I need a little pick-me-up or am craving a sweet bite, chocolate and nuts is quite often what I grab.


Irresistibly creamy and delicious easy chocolate mousse pie, topped with a sprinkling of mini chocolate chips and chopped nuts for the perfect touch of crunch.  

I love that I get the sweetness of chocolate paired with the protein of nuts ... it fills me up while simultaneously satisfying my {ever-active} sweet tooth!

This pie creation was inspired by one of my favorite snacks ... cashews and chocolate chips.  It's creamy and delicious, with just the right touch of crunch from the sprinkling of nut and mini chocolate chip topping.

Easy Chocolate Mousse Pie

Irresistibly creamy and delicious easy chocolate mousse pie, topped with a sprinkling of mini chocolate chips and chopped nuts for the perfect touch of crunch.

ingredients:

For the filling:
  • 1 (12 oz.) package mini semi-sweet chocolate chips {reserve 1 T. for topping}
  • 1/2 c. Silk Cashewmilk {or Silk Almond Milk or regular milk}
  • 1 T. granulated sugar
  • 1/2 tsp. vanilla extract
  • 1 1/2 (8 oz) containers non-dairy whipped topping {12 oz. total}
  • 1 prepared graham cracker pie crust
For the topping:
  • 1 T. mini semi-sweet chocolate chips {reserved from package used to make filling}
  • 2 T. coarsely chopped cashews
  • 1 T. sliced almonds

instructions:

How to cook Easy Chocolate Mousse Pie

  1. Place chocolate chips, milk, and sugar in a small saucepan over low heat. Heat, stirring constantly, until melted and smooth. Remove from heat and stir in vanilla. Let cool for 10 minutes.
  2. Fold melted chocolate mixture into the non-dairy whipped topping until well combined. Spoon into graham cracker crust. Sprinkle top with cashews, sliced almonds, and reserved mini chocolate chips, if desired.
  3. Cover and refrigerate at least 4 hours or over night.
