I remember ... probably starting back in my middle school'ish times ... making him batches of homemade eggnog at Christmas time. Complete with loads and loads of raw eggs. My thoughts about it? ~ Ewwwwww. Despite Dad's love for it, I wasn't a fan of the raw egg stuff then. And I'm not a fan of it now, either.
Whipped up with almond milk and sugar free instant pudding, and spiced just right with ground nutmeg, it packs all the flavor of 'regular' eggnog, in a much 'skinnier' version.
But this eggless version? This skinnier eggless eggnog recipe is one eggnog recipe I can get behind.
Whipped up with almond milk {or cashew milk ... or skim milk} and sugar free instant pudding, and spiced just right with ground nutmeg, it packs all the flavor of 'regular' eggnog, in a much 'skinnier' version.
Which makes it totally okay to indulge in an extra big squirt of whipped cream on the top if you'd like.
But I typically like mine with just nutmeg on it.
If you've got fresh nutmeg around ...
... grate it right onto the top of your glass of eggless eggnog.
And that's just how I like my eggnog. No raw eggs. Skinnier. And loads of ground nutmeg.
Of course, a shot or two bourbon in it sure doesn't hurt.

Skinnier {Eggless} Eggnog
Make your own skinnier eggless eggnog at home. It's easy! It's great to serve for sipping at your next holiday get-together, but you may just want to keep it all for yourself.

ingredients:
- 6 c. almond milk, cashew milk, or skim milk {I use Silk Almond Milk or Cashew Milk}
- 1 (1 oz.) package sugar-free instant vanilla pudding
- 2 T. granulated sugar
- 1 tsp. vanilla extract
- 1/2 tsp. ground nutmeg
instructions:
How to cook Skinnier {Eggless} Eggnog
- Combine milk, sugar, vanilla extract, and nutmeg in a pitcher. Slowly add dry pudding powder, whisking constantly as you pour in pudding powder.
- Refrigerate for about an hour before serving to allow eggnog to thicken a bit.
- Sprinkle each serving with additional nutmeg.

DeleteIf I wanted to turn this into actual pudding would I follow the same measurements except for the milk cause I got 2 boxes of pudding mix and both boxes say to put 2 cups of milk or 6
