Mocha Parfaits { & A Little Help for the Holidays from Kraft}

With creamy layers of mocha custard, coffee whipped cream, and coffee liqueur-laced cookie crumbs, Mocha Parfaits are a perfect sweet treat for entertaining.  Whip them up in shot glasses for a party treat, or cocktail glasses for a full-sized dessert.


Wow, is it ever getting close to Christmas day!  How are you doing on your holiday-prep to do list?  If you're anything like me, you're probably feeling a bit behind.

With all the extra fun that surrounds the holidays ... shopping, decorating, attending others' parties, planning and preparing for our own parties, gift wrapping, baking, and more ... all while still keeping up with the day-to-day routine, it can be hard to keep up with everything on the holiday to-do list.


Well, I've got a scrumptiously delicious easy entertaining recipe for you to help ease at least one part of your to-do list.  These cute little Mocha Parfaits.  They're a perfect sweet treat for a holiday party, open house, or festive dinner.

Serve them up in shot glasses for bite-sized treats, ...


or prepare them in cocktail or martini glasses for full-sized dessert servings.


Either way, I assure you they'll be a huge hit.

Mocha Parfaits

Ingredients
Chocolate Crumb Layer:
  • 1 1/2 c. finely crushed chocolate sandwich cookies
  • 3 T. coffee liqueur (I use Kahlua)
Coffee Whipped Cream Layer:
  • 2 c. whipping cream
  • 1 T. coffee liqueur (I use Kahlua)
  • 1/4 c. granulated sugar
Mocha Custard Layer:
  • 2/3 c. granulated sugar
  • 1/4 c. cornstarch
  • 2 T. instant coffee crystals (I use Maxwell House instant coffee)
  • 2  1/2 c. half-and-half (or whole milk)
  • 4 egg yolks
  • 2 oz. semi-sweet chocolate squares, chopped
  • 2 T. butter
  • Chocolate-covered espresso beans for garnish (optional)
Directions
  1. FOR THE CHOCOLATE CRUMB LAYER: Stir together crushed chocolate sandwich cookies and 3 tablespoons coffee liqueur until well combined. Set aside about 1/4 cup crumbs for garnish. Sprinkle remaining crumbs into the bottom of individual parfait glasses, dividing crumbs evenly between the glasses. Set aside.
  2. FOR THE COFFEE WHIPPED CREAM LAYER: Chill a large mixing bowl and the beaters of an electric mixer (or whisk attachment of a stand mixer) in the refrigerator for about 15 minutes. Remove from the refrigerator and pour the whipping cream and coffee liqueur into the chilled bowl. Beat on medium-high speed until foamy. Gradually add granulated sugar; beat on high speed until soft peaks form. Spread a layer of whipped cream over the cookie crumbs in each parfait glass, reserving some whipped cream for the top of the parfaits. (Note: If using shot-sized glasses, you'll need to reserve just enough whipped cream to pipe or place a dollop on the top of each parfait. If using larger glasses, you'll probably need to plan to make two layers of whipped cream ... one on top of the crumbs and one on top of the mocha custard.)
  3. FOR THE MOCHA CUSTARD LAYER: In a saucepan, whisk together granulated sugar, coffee crystals, and cornstarch. In a bowl, whisk together half-and-half and egg yolks. Whisk egg mixture into sugar mixture a little at a time.
  4. Bring sugar and egg mixture to a boil over medium heat, whisking constantly. Once mixture begins to boil, boil for one minute, whisking constantly. Remove from heat.
  5. Melt semi-sweet chocolate squares {over low heat in a small saucepan or in the microwave on high for about 1 minute}. Add melted chocolate and the two tablespoons butter to the sugar mixture in the saucepan and whisk in. Cover with plastic wrap and set aside to cool for about 30 minutes, stirring occasionally while cooling.
  6. Spread a layer of mocha custard over the whipped cream in each parfait glass, dividing the custard evenly among the glasses. {Check the temperature of the custard before doing this. If it still seems hot, cool it a bit longer ... or it will 'melt' the whipped cream. A little warm is okay ... hot, not so much.} Top each parfait with more whipped cream ... I like to pipe on a dollop so it looks extra pretty.
  7. Garnish each parfait with reserved cookie crumbs and a chocolate-covered espresso bean, if desired. Refrigerate for at least 2 hours before serving.
Note:  The number of individual parfait glasses needed will depend on the size used.  This recipe makes approximately 12 shot glass-sized servings and approximately 6 full-sized cocktail glass servings.
