Valentine's Day isn't a huge deal. In fact, my husband's idea of Valentine's
Day is pretty much this ...
It's a good thing I don't need grand Valentine's gestures or big plans.
While I don't need anything big from my loved ones on Valentine's Day,
I do like the day to at least be acknowledged. -- And let me
just tell you, with their rich
butter cookies

Cookies is just the type of acknowledgement I adore!
These heart-shaped cookies are a version of our very favorite Raspberry Jam Sandwich Cookies previously shared, all dressed up for Valentine's Day. To whip up a
batch, just grab heart-shaped cookie cutters and some hot pink or red sanding
sugar. -- And you'll have all you need to create this fun and tasty
Valentine's Day sweet treat.
For a festive touch, the cookies are sprinkled with a combination of turbinado
sugar first, and then colored sanding sugar. Using both sugars gives the
cookies just a little extra touch of texture and holiday sparkle. The
turbinado sugar is larger-grained, crunchier, and shimmers a little more in
the light, making the cookies beautifully sparkly. And the sanding sugar
brings that beautiful Valentine color.

Along with some basic baking ingredients, to whip up a batch of Valentine
Raspberry Sandwich Cookies, you'll need:
- Raspberry jam - Seedless raspberry jam, thickened by simmering, serves as the tasty raspberry filling. Be sure to use seedless jam to create a nicely-textured smooth jam filling.
- Butter - Creates the base of the cookie sandwiches' butter cookies, bringing a wonderfully rich buttery flavor to the cookies. Use pure unsalted butter for the best flavor and result.
- Cream cheese - A small touch of cream cheese helps create a cookie dough that's tender and very workable for rolling and cutting. We recommend using full-fat regular cream cheese, not reduced fat cream cheese, for both texture and flavor in this recipe.
- Turbinado sugar - Also know as Sugar In the Raw, a sprinkling of turbinado sugar on top of the cookie dough adds a nice textural element and bit of sparkle to the finished baked cookies.
- Pink sanding sugar - A large crystal decorating sugar, sanding sugar brings the festive color and sparkle to these beautiful heart-shaped cookies. We chose pink sanding sugar for ours, but red (or any other color you'd like!) works, as well.
How to Make Valentine Raspberry Sandwich Cookies:
Admittedly, Valentine Raspberry Sandwich Cookies take a bit of time to
prepare. -- But the tasty and beautiful result is worth it, for sure.
To get a batch of these delicious beauties started, first prepare the
raspberry filling. To make the filling, bring some seedless raspberry jam to
a simmer in a small saucepan. Then allow the jam to simmer gently for about
10 minutes until it's reduced in volume and thickened.
Set the jam aside to cool to room temperature.
Once the cookies' raspberry filling is cooling, mix up the cookie dough.
Valentine Raspberry Sandwich Cookies are made with a
basic butter cookie
dough that comes together pretty quickly with a simple mix of flour,
granulated sugar, salt, softened butter, cream cheese, and vanilla extract.
After mixing up these ingredients with an electric mixer, use your hands to knead the dough 3 or 4 times until it comes together into a
cohesive dough. Cover and chill the dough for about 30 minutes to firm it a
bit before rolling and cutting out the cookies.
Using a 2-inch heart cutter, cut out solid plain heart cookies for the bottoms
of the cookie sandwiches.
Then, sprinkle rolled out dough with turbinado and pink sanding sugar to
create the decorated tops of the cookie sandwiches.
First use the same 2-inch heart cutter that was used for the bottom cookies.
Then use a smaller heart-shaped cookie cutter to cut out the center of each
sugar-sprinkled cookie.
Bake both the cookie bottoms and tops, and let them cool completely on a
cooling rack.
We bake the smaller hearts cut out from the centers of the top cookies
separately, yielding tasty little butter cookie bites. (Just watch them
closely and reduce their baking time a bit so they don't overbake.)
To assemble the cookie sandwiches, spread a teaspoon of jam filling on each
"bottom" (solid) cookie.
Then place a "top" (cut-out) cookie on top of the raspberry jam. Let the
finished assembled cookies stand for about 30 minutes before serving to allow the jam filling to
set.
And then you're good to go with enjoying their deliciousness!

Valentine Raspberry Sandwich Cookies
With raspberry jam filling sandwiched between rich heart-shaped
butter cookies, Valentine Raspberry Sandwich Cookies are one truly

Ingredients
For the Butter Cookie Dough:
- 2 1/2 c. all-purpose flour
- 3/4 c. granulated sugar
- 1/4 tsp. salt
- 16 T. (2 sticks) unsalted butter, softened & cut into 16 pieces
- 2 T. cream cheese, softened to room temperature
- 2 tsp. vanilla extract
For the Filling & Sugar Topping:
- 1 1/4 c. seedless raspberry jam
- 1 T. turbinado sugar (sugar in the raw)
- Pink (or red) sanding sugar
Instructions
Prepare Raspberry Filling:
- Place jam in a small saucepan; bring to a simmer over medium heat.
- Reduce heat to low and simmer, stirring frequently, until jam has reduced to 1 cup, about 10 minutes. Jam will be very thick.
- Set aside to cool to room temperature.
Prepare Butter Cookie Dough:
- Place flour, sugar, and salt in the bowl of a stand mixer (or large mixing bowl); mix on low speed about 10 seconds until well combined.
- With the mixer running at low speed, add 1 piece of butter at a time dropping them in about 3 seconds apart. Once all the butter is added, continue mixing about 1 to 2 minutes until the mixture resembles moist crumbs. Beat in cream cheese and vanilla for about 30 seconds until dough starts to form large clumps.
- Use your hands to knead dough until it comes together into a large ball, about 3 or 4 turns.
- Divide dough into two equal pieces and press each piece into a round slightly flattened disc. Wrap each dough disc in plastic wrap, and chill in the refrigerator for 30 minutes until firm but still pliable.
Make Cookies for the Bottom of the Sandwich:
- Working with one dough piece (keep the other one in the refrigerator), roll to 1/8-inch thick between 2 pieces of parchment paper or on a lightly floured work surface. Peel away top sheet of parchment (if using).
- Use an approximately 2-inch heart-shaped cookie cutter to cut cookies from the rolled dough.
- Place on a baking sheet and bake at 375℉ degrees until light golden brown, about 8-10 minutes.
- Allow to cool on baking sheet for 2-3 minutes and then transfer to a cooling rack to cool completely.
Make Cookies for the Top of the Sandwich:
- Roll remaining dough piece 1/8-inch thick. Sprinkle the top evenly with the turbinado sugar; then add a small sprinkling of pink (or red) sanding sugar.
- Use the same 2-inch heart-shaped cookie cutter to cut cookies from the dough. Use a smaller heart-shaped cookie cutter to cut out the center of each sugar-sprinkled cookie.
- Bake in the same manner as the bottom-of-the-sandwich cookies.
Assemble Raspberry Sandwich Cookies:
- Once both the top and bottom cookies have cooled, spread a teaspoon of jam filling on each "bottom" (solid) cookie. Then place a "top" (cut-out) cookie on top.
- Let stand for about 30 minutes before serving to allow the jam filling to set.
TRACEY'S NOTES:
- The scraps from the sugar-sprinkled dough used for the top cookies can be re-rolled just fine. Gather up the scraps as you usually would to re-roll cookie dough, roll it out, and re-sprinkle the top with a little more turbinado and colored sanding sugar. I do, however, only re-roll this sugared dough one time so it does not become too loaded with sugar.
- As an added treat, bake the small hearts cut out from the top sandwich cookies to make heart butter cookie bites to enjoy! Just watch them closely and reduce their baking time a bit so they don't overbake.
- Valentine Raspberry Jam Sandwich Cookies freeze very well. Allow the jam filling to set as directed, and then layer in an airtight container with wax paper or parchment between each layer.
