It takes just 6 ingredients (+ some water) to make this tasty Strawberry
Rhubarb Dump Cake. To whip up a pan, you'll need:
- Fresh rhubarb - Creates the rhubarb foundation of the dump cake. We recommend fresh rhubarb for the best result. However, frozen rhubarb may be substituted. If using frozen rhubarb, measure the rhubarb while still frozen and then thaw for use in the recipe. Also, reduce the water called for in the recipe from 1 cup to 1/2 cup to account for frozen rhubarb's extra moisture.
- Fresh strawberries - Provide the strawberry element of the dessert and temper rhubarb's signature tartness. Fresh strawberries are best in this dump cake, as frozen strawberries release just too much liquid and make the dump cake watery.
- Sugar - Regular granulated sugar sweetens the tart rhubarb.
- Strawberry Jell-o - Brings additional sweetness and strawberry flavor to the dump cake, as well as thickens the dump cake's fruit filling as it bakes.
- Yellow cake mix - Creates the signature dump cake topping. Pour the dry cake mix directly on top of the strawberry-rhubarb filling. -- There's no mixing of the cake mix into a batter here.
- Melted butter - Drizzled on top of the dry cake mix, melted butter helps create the signature dump cake texture by moistening the cake mix and creating some crispness as it bakes.
- Water - Further moistens the cake mix, and mixes with the strawberry-rhubarb filling to create the dump cake's thickened sauce in the bottom of the baking dish.
How to Make Strawberry Rhubarb Dump Cake:
Strawberry Rhubarb Dump Cake is super easy to make. -- Just a little
chopping and the melting of some butter is all the effort this tasty
dump cake takes.
To get a pan started, first slice some fresh rhubarb and fresh
strawberries. Place them in the bottom of a baking dish and sprinkle
them with granulated sugar.
Then sprinkle on a package of dry strawberry Jell-o powder, distributing
it evenly over the rhubarb and strawberries. The Jell-o powder amps up
the strawberry flavor of the dump cake, as well as thickens the fruit
filling (and the "sauce" it creates) as it bakes.
Sprinkle dry yellow cake mix evenly over the top of the sweetened fruit.
-- Don't stir the cake mix and fruit layers together, just leave them as
they are.
Drizzle the dry cake mix with melted butter, distributing it as evenly
as you can. There will be some areas of dry cake mix that don't get
moistened by the butter, and that's okay.
Then drizzle the cake mix with water, again distributing it as evenly as
you can.
Try to moisten as much of the cake mix as you can, but again there will
still be some areas of cake mix that aren't moistened. -- And that's
alright.
Pop the pan in the oven and bake the dump cake for about 45-55 minutes until it's very lightly browned on the top and nice and
bubbly around the edges.
Allow the dump cake to cool to room temperature, and then chill in
the refrigerator. Then you're ready to enjoy the strawberry rhubarb
deliciousness! -- Top individual servings with a dollop of whipped cream or scoop of
vanilla ice cream.

Ingredients
- 4 c. diced rhubarb
- 2 c. sliced strawberries
- 3/4 c. granulated sugar
- 1 (3 oz.) package strawberry Jell-o
- 1 (15.25 oz.) package yellow cake mix
- 1/2 c. unsalted butter, melted
- 1 c. water
Instructions
- Spray the bottom of a 9x13-inch baking dish with non-stick cooking spray. Arrange diced rhubarb in an even layer in pan; sprinkle with 1/2 cup of the sugar.
- Arrange sliced strawberries evenly over rhubarb; sprinkle with remaining 1/4 cup sugar. Sprinkle dry strawberry Jell-o powder over the strawberries and sugar.
- Sprinkle dry cake mix evenly on top of the rhubarb/strawberries layer.
- Drizzle melted butter over cake mix; then drizzle water over cake mix. (Do not stir.)
- Bake at 350℉ for 45-55 minutes until very lightly browned on top and bubbly around the edges.
- Cool to room temperature, then chill.
- Top individual servings with Cool Whip, whipped cream, or vanilla ice cream if desired.
