Just 5 simple ingredients (plus a little salt and pepper) combine to make this crowd-pleaser of a dip. To whip up a bowl, you'll need:

  • Vidalia onions - Caramelized sweet Vidalia onions are the star of the dip, and create the dip's fabulous onion flavor. If Vidalias aren't available, other varieties of sweet onions can be substituted.

  • Spinach - Fresh baby spinach adds a nice little pop of color and flavor enhancement to the dip, as well.

  • Unsalted butter - Used in the pan to help caramelize the Vidalia onions. Salted butter also works just fine, if that's what you have on hand. -- Simply adjust the amount of salt sprinkled on the onions to account for the salted butter.

  • Sour cream - Creates a deliciously creamy base for the dip, beautifully delivering up and complimenting the tender caramelized onions. We recommend regular sour cream for the best creamy texture, but reduced fat sour cream can also be used.

  • Green onions - Chopped green onions bring in a nice fresh onion element to finish the dip.

  • Salt & pepper - Seasons and enhances the flavors of the dip.

How to Make Spinach Vidalia Onion Dip:

While caramelizing the dip's Vidalia onion does take a bit of time, Spinach Vidalia Onion Dip is truly super easy to make.

Get a bowl started by caramelizing the onions and cooking the spinach. To caramelize the onions, melt some butter in a large nonstick pan over medium heat. Add the chopped Vidalia onions and cook them, stirring often, until they're nicely golden in color and very tender, which takes about 25 to 30 minutes.

Twenty-five to 30 minutes may seem like a long time to cook onions, but the flavor result is worth every minute. Cooking low and slow allows the natural sugar in onions to brown and caramelize, creating wonderful flavor.

Once the onions are caramelized, gradually add baby spinach to the pan a couple handfuls at a time, stirring until the spinach is just wilted after each addition. Sprinkle the mixture with a little kosher salt and pepper, then remove it from the heat and let the onions and spinach stand for about 30 minutes to cool.

Once the Vidalia onion-spinach mixture is cooled, mix together some sour cream and chopped green onions. Stir in the caramelized onions and spinach, and add a little more salt and pepper.

Cover and chill the dip at least 30 minutes before serving to allow the flavors to meld.

Ingredients

  • 3 T. unsalted butter
  • 4 c. chopped Vidalia onions (about 2 large onions)
  • 1 (5 oz.) package fresh baby spinach
  • 1 1/4 tsp. kosher salt, divided
  • 1/2 tsp. black pepper, divided
  • 1 (16 oz.) container sour cream
  • 1/3 c. chopped green onions (about 2 green onions)

Instructions

Caramelize Onions & Cook Spinach:
  1. Melt butter in a large nonstick skillet or saute pan over medium heat. Add onions and 1/4 teaspoon kosher salt.
  2. Cook onions, stirring often, until golden in color and very tender, about 25 to 30 minutes.
  3. Gradually add spinach a couple handfuls at a time, stirring until just wilted after each addition.
  4. Sprinkle with 1/2 teaspoon kosher salt and 1/4 teaspoon pepper; stir.
  5. Remove from heat and let stand for 30 minutes to cool.
Prepare Dip:
  1. In a medium bowl, stir together sour cream and chopped green onions. Stir in caramelized onion-spinach mixture, remaining 1/2 teaspoon kosher salt, and remaining 1/4 teaspoon pepper.
