I've searched a while for a peanut butter frosting recipe I'm happy with. And
I'm happy to say, with this peanut butter frosting made with marshmallow
creme, that search is over.
Several peanut butter frosting recipes I've tried in the past have left me
less than impressed. Either the peanut butter flavor wasn't strong enough, or
it seemed the consistency was just off -- making the frosting difficult to
pipe, kind of pasty, or (on the other end of the consistency spectrum) just
too soft to hold its shape.
Well this peanut butter frosting, made with marshmallow creme as its base,
doesn't present with any of those problems. It's a deliciously rich frosting
with pronounced peanut butter flavor, and has a nice creamy texture that
beautifully holds its shape when piped.

Now since it's made with both peanut butter and marshmallow creme, I guess
this peanut butter frosting could technically be called "Fluffernutter
frosting," after the classic sandwiches bearing the same combination of
spreads.
But to me, Fluffernutter sandwiches are made in layers that retain the two
distinct flavors of both the peanut butter and the marshmallow Fluff. Since in
this frosting the two elements combine to deliver up one single flavor, I'm
hard-pressed to call it "Fluffernutter frosting." -- Just call me a
Fluffernutter purist!
But no matter what you call it, one thing's for sure. -- This peanut butter
frosting made with marshmallow creme is simply delicious. And simply perfect
for whipping up a tasty treat for those peanut butter lovers in your
life.

Then beat them together with an electric mixer on low speed until
they're well combined.
Add some confectioners' sugar, a sprinkling of salt, and one tablespoon
of milk. Beat these together at medium speed until everything's just combined
and smooth.
Check the frosting's consistency, and beat in one more tablespoon of milk, if needed, to make the frosting
a nice consistency for spreading.

- 3/4 c. creamy peanut butter
- 6 T. butter, softened
- 1/2 tsp. vanilla extract
- 1 1/2 c. confectioners' sugar
- 1 - 2 T. milk
- 1/8 tsp. salt
Instructions
- Place marshmallow creme, peanut butter, butter, and vanilla in a medium-sized mixing bowl. Mix at low speed with an electric mixer until well combined.
- Add confectioners' sugar, salt, and 1 tablespoon milk; beat at medium speed until just combined and smooth.
- Check consistency of frosting. If needed, beat in 1 more tablespoon milk to make frosting a nice consistency for spreading.
