My 10-year-old daughter and I have been spending a lot of time together in the kitchen lately.  It's been fun times of baking her classic favorites like buttermilk banana bread and coconut macaroons, trying out new recipes, and -- the most fun of all -- working toward getting her independent with a few recipes she can make completely on her own.

It's a joy to see her pride and sense of accomplishment shine when she feels the success of cooking or baking something totally on her own.

She's always helped me in the kitchen -- measuring, getting out ingredients, mixing, and taste-testing.  But it's a completely different experience and level of responsibility for her to be working toward kitchen independence.  And she loves it.

Cake mix cookies are really quite tasty.  And since they use a boxed cake mix as the base, they're really easy to make, too.

So far she's made her first cake from a box mix and frosted it -- with me just scraping a little of the batter out of the mixing bowl for her.  And has become completely independent with making scrambled eggs and our family-favorite 3-ingredient crescent sausage bites.

You know what else she's completely independent making?  These tasty Chocolate Crinkle Cake Mix Cookies.  Yes, our 10-year-old Miss H. made the cookies featured in this post's photos!  Totally and completely on her own, from start to finish.  And both she and this Mom are very proud of her creation.

If you're not familiar with cake mix cookies, they're really quite good.

I was skeptical when I first tried out making cookies with cake mix, thinking they wouldn't taste all that great, or would bake up with some bizarre texture.

But that's not the case. -- Cake mix cookies are really quite tasty.  And since they use a boxed cake mix as the base, they're really easy to make, too.  Hardly any measuring, just a few basic ingredients, and super quick to mix up.

Because they're so easy and require very little measuring, cake mix cookies are a fabulous recipe to get kids baking. -- Especially if you happen to be working toward building kitchen independence, like we are with our little Miss H.

But believe me, just because cake mix cookies are easy to make and a great starter recipe for kids doesn't mean the grown-ups won't love the recipe, too!  Cake mix cookie recipes are great for anyone who wants to whip up a tasty cookie quickly and easily.

This Chocolate Crinkle Cake Mix Cookies recipe takes just 5 simple ingredients:
  1. a box of Devil's Food cake mix
  2. canola or vegetable oil
  3. eggs
  4. vanilla extract, and
  5. some powdered sugar, for rolling the cookies

To whip up a batch, simply stir together the dry cake mix, oil, eggs, and vanilla extract in a large mixing bowl until the mixture comes together to form a dough.  

The ingredients come together really easily, so you don't even need to use an electric mixer.  Mixing by hand works just fine.  

Cover and refrigerate for 20 minutes to make dough easier to work with for rolling.

Once the dough has chilled a bit, use your hands to roll the dough into 1-inch balls. 

Place the powdered sugar in a small bowl and roll each dough ball in powdered sugar, coating the cookie dough ball completely.

Truly, the more fully coated the dough is with powdered sugar, the prettier the crinkle result will be on the baked cookies.

Place the sugar-covered dough balls on a cookie sheet about 2 inches apart so they have some room to spread as they bake.

Bake the cookies up for about 10 minutes, and then cool them on the pan for a minute before removing them to a rack to cool completely.

Ingredients

  • 1 (15.25 oz.) box Devil's Food cake mix
  • 1/3 c. canola or vegetable oil
  • 2 eggs
  • 1 tsp. vanilla extract
  • about 1/4 c. powdered sugar, for rolling

Instructions

  1. In a large mixing bowl, stir together dry cake mix, oil, eggs, and vanilla extract until the mixture comes together to form a dough.
  2. Cover and refrigerate for 20 minutes to make dough easier to work with for rolling.
  3. Use your hands to roll dough into 1-inch balls. Place powdered sugar in a small bowl and roll each dough ball in powdered sugar, coating it completely.
  4. Place sugar-covered dough balls on an ungreased cookie sheet about 2 inches apart. Bake at 350℉ for 9-11 minutes or until set.
  5. Cool on pan for 1 minute; remove to a cooling rack and cool completely.
  6. Store tightly covered in an airtight container.
