Summertime is upon us!  And along with summertime comes all kinds of wonderful get-togethers with family and friends.  There never seems to be a shortage of fun times in the summertime.

No matter what the type of summer event, one of my favorite things to whip up for entertaining is this classic Pineapple Cheese Ball.

Loaded with great flavor from its tasty combination of crushed pineapple, fresh green pepper, and finely chopped onion, this cheese ball is always a favorite.

Whether toted in a picnic basket to an outdoor concert, shared at a potluck cookout, or served up with crackers for poolside snacking, this cheese ball never fails to please.

And you know what? Do you know my favorite place to shop for everything I need?  Food Lion.

I always know when making my grocery list that Food Lion will be my one-stop shop for all I need for my summer get-togethers, whether I'm hosting or just prepping a dish to bring along to a friend's summertime fun.

For example, the other day I made this Pineapple Cheese Ball to bring to a friend's kick-off-the-summer pool party.  I knew Food Lion would have all the ingredients called for in the recipe, so I could quickly and easily grab everything I needed. 

Being able to grab what I need in one-stop is especially important when I have our sweet little 8-year-old Miss H. in tow like I did on this shopping trip.  Don't get me wrong, Miss H. loves to grocery shop with me ... but her patience only lasts just so long.  Making multiple stops usually doesn't pan out so well.

Whether toted in a picnic basket to an outdoor concert, shared at a potluck cookout, or served up with crackers for poolside snacking, this cheese ball never fails to please.

Her favorite thing to do at Food Lion is to push her own "customer in training" cart and read the aisle signs to find what we're looking for.  After each item she'll ask, "What's next on the list?" in her sweet sing-song-y voice, look up at the aisle signs, and then proudly announce something like, "We're headed to aisle 4!"

It's so sweet.  And I love that with Food Lion's wide aisles, I don't have to worry too much about her still-erratic driving.

Now, whipping up this cheese ball for the pool party was almost as easy as grabbing all my ingredients at Food Lion.

The key to trouble-free prep is to make sure the cream cheese is softened to room temperature.  This makes it so easy to mix all the ingredients together and ensures there are no cream cheese lumps.

Simply combine the softened cream cheese, well-drained crushed pineapple, finely chopped onion, green pepper, a touch of salt, and some chopped walnuts until well mixed.  Then spoon this cream cheese mixture onto a sheet of plastic wrap, wrapping it up and shaping the mixture into a ball. 

The key is to make sure the cream cheese is softened to room temperature.  This makes it so easy to mix all the ingredients together and ensure there are no cream cheese lumps.

Place the ball in the freezer for about 10 minutes to firm it up a bit.

Once the cheese ball is a little firm, remove it from the freezer and unwrap it.  Then, roll it in chopped walnuts to completely coat the outside.

If you need to, press the nuts down gently with your hand to get them to adhere to the outside of the cheese ball.

Then cover the finished cheese ball and refrigerate it overnight to let the flavors meld together.

Once those flavors meld together, this Pineapple Cheese Ball is pure deliciousness.  

It's got a slight sweetness from the pineapple, creaminess from the cream cheese, a savory note from the onion and green pepper, and wonderful crunch from the chopped walnuts.

So no matter the type of summer event, I highly recommend this tasty Pineapple Cheese Ball for your entertainment menu.  And I highly recommend Food Lion to make your summer entertaining easy & affordable.

Pineapple Cheese Ball
(Print recipe)
Ingredients
  • 2 (8 oz.) packages cream cheese, at room temperature
  • 1 (8 oz.) can crushed pineapple, well-drained
  • 1/4 c. finely chopped green pepper
  • 1 T. finely chopped onion
  • 1/2 tsp. salt
  • 1 c. finely chopped walnuts, divided
Directions
  1. In a bowl, mix together cream cheese, well-drained pineapple, green pepper, onion, salt, and ½ cup chopped walnuts until well combined.
  2. Spoon cream cheese mixture onto a sheet of plastic wrap. Wrap in the plastic wrap and shape into a ball. Place in the freezer for 10 minutes.
  3. Remove from freezer, unwrap, and roll in remaining ½ cup chopped walnuts. Press nuts down gently, if needed, to adhere to the outside of the cheeseball.
  4. Cover. Refrigerate over night to allow flavors to meld.
  5. Serve with crackers.

Hello, I don't think that you are aware of this, but...when I opened your post today, right under "the kitchen is my playground, there's a picture of Men's underware that says "This is what Men love so much about this underware"! and further down on the page there's a Man laying on his side wearing nothing but his underware that says the same thing. I don't know if you will be able to do anything about it, but it's quite surprising!
