Who doesn't love a hearty casserole loaded with great flavor for dinner?

I know our family sure loves a good casserole.  And with its creamy beefy sauce, this Beef Stroganoff Casserole is one of our all-time favorites.  To quote our 7-year-old Little Miss H., it's delicious!

Loaded with ground beef, noodles, fresh sliced mushrooms, and a creamy beefy sauce, it's also loaded with great flavor the whole family will love.

While I have to agree with our sweet Little Miss H.'s opinion, there's an even bigger bonus than great taste that came along with this tasty casserole ~ the cash rewards I earned when I shopped at Food Lion for the ingredients to make it.

Haven't heard of Shop & Earn yet?  Well, let's change that.

Shop & Earn is a new savings and cash rewards program from Food Lion.  With it, you get rewarded for something you already do anyway ... shopping for groceries!

It's super easy.  You shop for groceries ... you earn reward money {in addition to the MVP savings you're already getting} ... and then use your reward money to save on your next Food Lion shopping trip.  It's truly that simple.

Grab some ground beef, fresh mushrooms, sour cream, and other goodies and whip up this tasty Beef Stroganoff Casserole for dinner.

So to join in with the Shop & Earn savings fun, just follow three simple steps:

1.  ACTIVATE

Visit the Food Lion Shop & Earn site or Food Lion's Mobile App (available for both iOS and Android devices:  Food Lion Mobile App - iTunes | Food Lion Mobile App - Google Play) to activate your personalized monthly reward-earning offers.  The monthly offers are pretty sweet!

Here's a sneak-peek at a few of the earnings offers made to me this month:

I'm especially looking forward to that $10 reward once I spend $30 in any part of the store.  Sure, I'll happily take $10 back on my next grocery shopping trip!  No need to twist my arm.

2.  SHOP & EARN

Shop for groceries like you always do ... use your MVP card ... and watch your reward earnings grow.  You can see your progress toward your monthly offers at any time on the Food Lion Shop & Earn site.

3.  REDEEM

Once the goal of one of your offers has been reached, the reward is automatically redeemed on your next Food Lion shopping trip.  Sweet!
That's an easy savings program I can get into, for sure.

How to cook Beef Stroganoff Casserole

  1. Cook noodles according to package directions. Drain and set aside.
  2. In a large saucepan, melt 3 tablespoons butter over medium to medium-high heat. Add onion and garlic and saute until limp, about 2 to 3 minutes. Add ground beef and mushrooms. Cook, stirring frequently, until ground beef is browned.
  3. Remove pan from heat. Stir in flour.
  4. Return pan to heat. Stir in tomato sauce, Burgundy/red wine, beef broth, salt, and pepper. Bring a boil; reduce heat and simmer, uncovered, for 10 minutes.
  5. Stir in sour cream and mozzarella cheese. Toss ground beef mixture with the cooked noodles.
  6. Spoon into a greased 2-quart casserole dish.
  7. For the topping, combine 1 tablespoon melted butter, Panko bread crumbs, Parmesan, and chopped parsley in a small bowl. Toss together with a fork. Sprinkle evenly over the top of the noodle mixture.
  8. Bake at 350℉ for 25 – 30 minutes until heated through and bubbly.

  1. The recipe sounds super tasty, and the photo is making my mouth water! However, I'm not so sure if I'd like it with tomato sauce, so I'll probably leave that out. Also, do you think that Chardonnay wine would work ok in this dish, since that's my favorite wine to cook with. Nevertheless, I gotta say, the other casseroles which you posted also look as though my family & I will enjoy, so I don't know where to start! I randomly came across your blog, but I'm now signing up to receive your yummy recipes.

    1. I was thinking the same thing about the tomato sauce as I read the ingredients. I've tried many stroganoff recipes but this is the first one I've come across calling for it.
