Comfort food vegetable casseroles are right up my alley. There's just something about the creaminess of vegetables slathered in sauce or cheese, or baked up in a tasty custard-type batter, I love.
Some of my favorites? The classic Creamy Broccoli Casserole my Mom always makes for Thanksgiving dinner. Or the custardy Corn Pudding we discovered while on a trip to Chesapeake Bay's Tangier Island. And when I'm trying to eat lower-carb? I adore digging in to a pan full of Cauliflower {Just Like} Loaded Baked Potato Casserole.
When it comes to comfort food vegetable casseroles, this creamy Corn Fritter Casserole sure fits the bill.
Yes, I know there are much much healthier ways to enjoy my vegetables. And most of the time, I do indeed eat my veggies in their more pure, simpler, healthier form. But when they're around, a good vegetable casserole is something I just can't resist.
And when it comes to comfort food vegetable casseroles, this creamy Corn Fritter Casserole sure fits the bill.
And if that's not casserole comfort food, I don't know what is.
In the simplest sense, a fritter is literally considered to be just a "fried thing." Though more typically, we think of fritters as some type of primary ingredient {like corn ... or apples ... or meat} mixed with a simple batter and then deep-fried in small cake-like bits.
Then how is this baked casserole a fritter, you ask?
Well, it's not exactly.
Think of it like a squishy cornbread loaded with whole kernel corn and great corn flavor.
The term "fritter" is used loosely in this dish's title, because this Corn Fritter Casserole is certainly not fried. Nor does it result in little cake-like bits. It's a baked mixture of whole kernel corn and cream-style corn combined with eggs and corn muffin mix.
The eggs and corn muffin mix create a batter that ends up surrounding the corn in a blanket of soft cornbread-type concoction once baked. Much like a true fritter's batter surrounds the other ingredients after frying.
So we'll have to give this casserole a little latitude in its use of the term "fritter" in its name.
But whether or not you agree to its use of the word "fritter," I think one thing we'll all agree on ... besides this Corn Fritter Casserole's great taste ... is just how easy it is to make.
The hardest part of its prep is whisking up two eggs and chopping some fresh green onion. And that's not too hard!
Simply mix together softened butter and cream cheese with lightly beaten eggs. Add in canned corn, cream-style corn, chopped green onion, a touch of salt and pepper, and a package of corn muffin mix. And then pour the mixture into an 11x7-inch baking dish and bake it until set, about 45 minutes or so.
That's all there is to it! Pretty easy one-bowl prep ... which I love.
So whether this Corn Fritter Casserole truly qualifies as a "fritter" remains open for debate.

ingredients:
- 1/4 c. unsalted butter, softened
- 1 (8 oz.) package cream cheese, softened
- 2 eggs, lightly beaten
- 1 (15.25 oz.) can whole kernel corn, drained
- 1 (14.75 oz.) can cream-style corn
- 1/2 c. finely chopped green onion
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 (8 ½ oz.) package corn muffin mix {I use Jiffy}
instructions:
How to cook Corn Fritter Casserole
- In a large mixing bowl, combine softened butter and cream cheese. Add eggs and stir with a whisk until mixture is smooth.
- Stir in corn, cream-style corn, onion, salt, and pepper. Add corn muffin mix and stir until well combined.
- Spray an 11x7-inch baking dish with non-stick cooking spray. Pour batter into prepared dish.
- Bake at 375℉ for 45-50 minutes until a wooden pick inserted in the center comes out clean.
