I try to eat low-carb or no-carb throughout the day, limiting my carb intake to dinner only. Admittedly though, I haven't been doing very well with this lately ... It's time to get back on track.
With this low-carb during the day eating approach, I'm always striving to come up with new low-carb lunch choices that are quick, easy, and tasty.
Cut horizontally into fairly thin slices, cucumber slices work perfectly for making sandwiches ~ without the carbs.
My new favorite?
Low-carb Smoked Turkey & Cucumber "Sandwiches" ... that use ... I'm sure you guessed it, ...
cucumber slices instead of bread!
Cut horizontally into fairly thin slices, cucumber slices work perfectly for making sandwiches ~ without the carbs.
Then spread one cucumber slice with a little cream cheese or Laughing Cow spreadable cheese {that's what I use}.
You'll want to choose a cucumber that's pretty wide to give the most "space" for making your bread-less cucumber sandwich.
Sprinkle the cheese layer with a little fresh or dried dill, and pile on a couple slices of smoked turkey. Top the turkey with another slice of cucumber, and give it another little sprinkle of salt, pepper, and dill.
And you've built yourself one very tasty low-carb, bread-free sandwich.
But not only are these "sandwiches" quick, easy, and low-carb ... they're versatile, too.
Switch up the ingredients to suit your taste ... and enjoy having a few more options on your low carb lunch list!

ingredients:
- a wide cucumber
- spreadable cheese {such as cream cheese or Laughing Cow cheese wedges}
- fresh or dried dill
- sliced deli smoked turkey
- salt & pepper
instructions:
How to cook LOW-CARB SMOKED TURKEY & CUCUMBER "SANDWICHES"
- Remove ends of cucumber. Cut cucumber into 5-inch or 6-inch long pieces {or longer if you'd like!}. Cut each cucumber piece horizontally into approximately 1/4-inch thick slices to form the sandwich 'bread.'
- For each 'sandwich,' lay out one cucumber slice and sprinkle with a bit of salt and pepper. Spread with cheese, sprinkle with dill, and lay on some smoked turkey.
- Top with another cucumber slice and sprinkle the top with additional salt, pepper, and dill.

...and everyone here thinks you’re eating low-cal by dropping the bread but then adding mega-fattening cream cheese? You’re better off using cottage cheese and adding thin sliced bread anyway.
