Philly Cheese Steak Stuffed Peppers ~ All the classic flavors of a Philly Cheese Steak, in stuffed pepper form. It's a must-try! And a great lower-carb dinner that's loaded with flavor.
As I said not long ago in my Southwestern Stuffed Poblano Peppers post, my husband had been bugging me to make him stuffed peppers for quite a while. But regular-ol' stuffed peppers are just not my thing.
When I was a kid, my Mom used to make the ones stuffed with rice and ground beef slathered in some kind of tomato sauce. You know, it was a flavor combination I just didn't like.
But when I came across the idea for Philly Cheese Steak stuffed peppers, I knew I had found some stuffed peppers I could get into.
These peppers are tasty, tasty, tasty. And, without the bread, they're a lower-carb way to enjoy a Philly cheese steak, to boot.
I mean, seriously, stuffing all the yummy flavors of a Philly Cheese Steak into a pepper and topping it with melty provolone cheese? It's genius. And I just had to give it a try.
And I must say, I was certainly not disappointed. And neither was my stuffed-peppers-requesting husband.
These peppers are tasty, tasty, tasty. And, without the bread, they're a lower-carb way to enjoy a Philly cheese steak, to boot.
Just how do you make these tasty stuffed peppers? It's super easy.
First de-seed some green bell pepper halves and line the inside of them with provolone cheese ...
Then saute onions and fresh mushrooms until they're soft ...
Coarsely chop some sliced deli roast beef and place it in the pan with the onions and mushrooms ...
Then heap the roast beef mixture inside the pepper halves. Really, really get those peppers as full as can be. Heap them on up. Because the filling mixture will squish down as the peppers bake.
Cover the top of each pepper with another slice of provolone cheese ...
And then bake it all up until the peppers are soft, and the cheese is all melted into a slightly browned, gooey mess.
The green peppers will turn fork-tender. And when combined with the onions, peppers, and roast beef of the filling, give the taste of a warm cheesy Philly cheese steak in every bite.
So if you're looking for a different twist on stuffed peppers, bake up a pan of these cheesy beauties. Then get ready to dive in and enjoy your Philly Cheese Steak ... stuffed pepper style!

Philly Cheese Steak Stuffed Peppers
All the classic flavors of a Philly Cheese Steak, in stuffed pepper form. It's a must-try! And a great lower-carb dinner that's loaded with flavor.

ingredients:
- 2 large green bell peppers
- 1 large onion, sliced vertically
- 8 oz. fresh button mushrooms, sliced
- 4 slices deli roast beef, chopped
- 8 slices provolone cheese
- 2 T. butter
- salt & pepper, to taste
instructions:
How to cook Philly Cheese Steak Stuffed Peppers
- Slice peppers in half lengthwise, remove seeds and ribs; place in a baking pan coated with non-stick cooking spray.
- Line the inside of each pepper half with a slice of provolone cheese.
- Melt butter in a saute pan over medium heat. Add sliced onion to the pan and cook until tender, about 7 minutes.
- Add the sliced mushrooms and cook for about 5 minutes more.
- Add chopped roast beef and cook until heated through, about 1 minute. Season with salt and pepper, to taste.
- Divide the meat filling mixture evenly between the pepper halves, filling each pepper until heaping full.
- Top each pepper half with a slice of provolone cheese.
- Bake at 350 degrees for 40-45 minutes until peppers are tender, covering loosely with aluminum foil after the first 20 minutes of baking.
