Not too long ago, I professed my love for salsas when I posted my recipe for easy Restaurant-Style Salsa.  It's an undying love, for sure.  Well, now I bring you my all-time absolute favorite salsa.  Ever.  Like, if salsas could be our friends, this one would be my BFF.

Packed full of spicy-smoky chipotle chilies, caramelized roasted corn, and sweet, cool mango, the flavors in this Roasted Corn, Black Bean, & Mango Salsa are truly out-of-this-world good.

And it's gorgeous, too!  I mean, just check out the beautiful colors and bright big hunks of fresh mango ...

And let me just tell you, this Roasted Corn, Black Bean, & Mango Salsa makes my mouth do a happy dance.  With tortilla chips?  Happy dance.  With pita chips?  Happy dance.  With roasted pork or grilled chicken?  Happy dance.  Just straight up from a big ol' spoon?  Happy dance.

And apparently it makes other people's mouths do happy dances, too.  Whenever I bring this salsa somewhere ... 'cause it's one of my go-to bring-it-to-a-picnic-or-party dishes ... it gets rave reviews.  Mmmm, hmmm ... it's one of those dishes ... that everyone seems to compliment or ask for the recipe.

So if you're looking for a new salsa best friend, I'll share my Roasted Corn, Black Bean, & Mango Salsa BFF with you ... I don't think it'll mind.  {and then your mouth can do a salsa happy dance, too.}

Roasted Corn, Black Bean, & Mango Salsa

Roasted Corn, Black Bean, & Mango Salsa

The flavor combination of roasted corn, smoky chipotle chilies, and sweet fresh mango in this Roasted Corn, Black Bean, & Mango Salsa is truly out-of-this-world good.

Ingredients:

  • 1 T. olive oil
  • 3 c. corn kernels, fresh or frozen (thawed)
  • 2 garlic cloves, minced
  • 1 c. finely chopped red onion
  • 1 c. chopped red bell pepper
  • 2 c. peeled and diced fresh mango
  • 6 T. chopped fresh cilantro
  • 2 (15 oz.) cans black beans, drained and rinsed
  • 1/3 c. fresh lime juice (about 2 limes)
  • 4 chipotle chilies in adobo sauce, minced
  • 1/2 tsp. salt

Instructions:

How to cook Roasted Corn, Black Bean, & Mango Salsa

  1. Heat olive oil in a nonstick skillet over medium-high heat. Add garlic; cook for about 30 seconds. Stir in corn kernels. Cook corn for about 8 minutes, stirring occasionally, until browned. You want the kernels to develop brown, or even a few blackened, charred spots on them. 
  2. Remove from heat and place corn in a large bowl.
  3. Add red onion, bell pepper, mango, cilantro, black beans, lime juice, chipotle chilies, and salt. Mix well.
  4. Chill for about 30 minutes before serving. 
  5. Serve with tortilla chips, as a salad, or spooned over pork or chicken.
TRACEY'S NOTES:
  1. You can also use jarred mango (found in the produce section) and frozen mango (thawed out before chopping) just fine.
  2. Chipotle chilies add a lot of heat. Use less if you prefer a milder salsa.
  3. When cooking the corn, really make sure to brown it ... it's supposed to get dark brown and black'ish spots on it.  The roasted char gives the corn such fantastic flavor.
