Low-Carb Smoked Turkey & Cucumber 'Sandwiches'

Looking for easy, low-carb lunch ideas?  These Low-Carb Smoked Turkey & Cucumber 'Sandwiches' have got you covered!

I try to eat low-carb throughout the day, limiting my carb intake to dinner only.  {Though admittedly, I haven't been doing very well with this lately ... Time to get back on track}.  With this approach, I'm always striving to come up with new low-carb lunch choices that are quick, easy, and tasty.

My new favorite?

Low-carb Smoked Turkey & Cucumber 'Sandwiches' ... that use ... I'm sure you guessed it, ...
Cucumber slices instead of bread!

Cut horizontally into fairly thin slices, cucumber slices work perfectly for making sandwiches ~ without the carbs.

Simply spread one cucumber slice with a little cream cheese or Laughing Cow spreadable cheese {that's what I use}, sprinkle with a little fresh or dried dill, and pile on a couple slices of smoked turkey ... and you've built yourself one tasty bread-free sandwich.

When I dive on in to my low-carb Smoke Turkey & Cucumber Sandwiches, I love the crunch of biting into the cucumber.  And I love the flavor combination of cucumber with fresh dill and the salty-smokiness of smoked turkey.

But not only are these 'sandwiches' quick, easy, and low-carb ... they're versatile, too.  Switch up the ingredients to suit your taste ... and enjoy having a few  more options on your low carb lunch list!

Low-Carb Smoked Turkey & Cucumber 'Sandwiches'

  • a wide cucumber
  • spreadable cheese {such as cream cheese or Laughing Cow cheese wedges}
  • fresh or dried dill
  • sliced deli smoked turkey
  • salt & pepper
  1. Remove ends of cucumber. Cut cucumber into 5-inch or 6-inch long pieces {or longer if you'd like!}. Cut each cucumber piece horizontally into approximately 1/4-inch thick slices to form the sandwich 'bread.'
  2. For each 'sandwich,' lay out one cucumber slice and sprinkle with a bit of salt and pepper. Spread with cheese, sprinkle with dill, and lay on some smoked turkey.
  3. Top with another cucumber slice and sprinkle the top with additional salt, pepper, and dill.
