For the BLT basics, you'll need:
- Bacon - The "B" in "BLT," and star of this sandwich show! Thick-cut and applewood smoked bacon make for excellent BLTs, but any bacon works just fine. Choose your favorite.
- Romaine lettuce - The "L" in "BLT." We recommend Romaine lettuce for it's nice color and texture, but any lettuce works.
- Sourdough bread - For the best BLT, choose a nice sourdough or other crusty bread from the grocery store bakery. These sturdy, crusty breads are great choices for a Marinated Tomato BLT because they soak up the deliciousness of the marinated tomato juices. Regular bread can work, too, but it doesn't hold up as well to the juiciness of the marinated tomatoes.
- Butter - A touch of butter spread on the sandwich's still-warm toasted bread is a BLT must, in our book. It melts into and softens the bread just a bit, and mixes with the mayonnaise to make the BLT extra delicious. We recommend unsalted butter, but use whatever you prefer.
- Mayonnaise - To us, it's just not a BLT without a good slathering of mayonnaise. Choose your favorite brand.
For the
marinated tomatoes
("T" in the "BLT"), you'll need:
- Fresh tomatoes - Tomatoes fresh from the garden are the best, but grocery store tomatoes work very well, too. If using grocery store tomatoes, choose vine-ripened or beefsteak tomatoes for the best result.
- White vinegar - Brings the acid element to the marinade.
- Extra virgin olive oil - Brings the oil/fat element to the marinade. Choose a good quality extra virgin olive oil with a taste you love.
- Sugar - A small touch of granulated sugar rounds out the flavors and "softens" the vinegar, making for very flavorful marinated tomatoes.
- Salt & pepper - Seasons the marinade and tomatoes. A small sprinkling of salt on the marinated tomatoes just before placing them in your BLT is also nice to enhance their flavor even more.
- Fresh parsley - Also seasons the tomatoes. Stick with fresh chopped parsley, rather than dried, for the best flavor and texture result.

How to Make a Marinated Tomato BLT:
A Marinated Tomato BLT comes together in just the same way as a
classic BLT, except for the step of marinating the tomatoes in
advance. Marinated tomatoes need about 3 to 4 hours to develop their
flavor, so plan ahead and get those tomatoes going beforehand.
To make the marinated tomatoes, just slice some tomatoes into thick
slices, anywhere from 1/4-inch to 1/2-inch thick. Place the tomato
slices in a single layer in a 9x13-inch baking pan or other shallow
dish.
Whisk together some white vinegar, olive oil, sugar, salt, pepper,
and chopped fresh parsley to make the marinade. Then pour the marinade evenly over the tomato slices. Cover and refrigerate the tomatoes for 3 to 4 hours to allow the flavors to
meld.
While the tomatoes marinate, the refrigerated olive oil will
solidify. Allow the tomatoes to sit at room temperature for about 10
minutes while you prepare your BLT to let that solidified olive oil
return to a liquid state.
Once the tomatoes are ready, move ahead with preparing the Marinated
Tomato BLT just as you would any other BLT. -- Which for us means,
first spread some lightly-toasted bread slices on one side with butter
and then mayonnaise. Using a layer of both butter and mayonnaise on
the bread is a BLT must for us!
Then place some lettuce, marinated tomato slices, and several slices
of crispy bacon on top of the mayonnaise, topping it all off with
another slice of slathered bread.

Ingredients
For the
marinated tomatoes:
- 3 large or 4-5 medium-sized tomatoes
- 1/4 c. white vinegar
- 1/3 c. extra virgin olive oil
- 2 tsp. granulated sugar
- 1 tsp. salt
- 1/8 to 1/4 tsp. pepper
- 1/4 c. chopped parsley
For the BLTs:
- 4-6 slices thick-cut bacon, cooked crisp
- 1-2 leaves of Romain lettuce
- 2-4 marinated tomato slices
- 4 slices sourdough or other sturdy bread, very lightly toasted
- butter
- mayonnaise
Instructions
Prepare the marinated tomatoes:
- Slice tomatoes into thick slices. Place in a single layer in a 9x13-inch baking pan or other shallow dish. Set aside.
- In a small bowl, whisk together vinegar, olive oil, sugar, salt, and pepper until well combine and sugar is fully dissolved. Whisk in chopped parsley.
- Pour vinegar mixture evenly over tomato slices.
- Cover and refrigerate for 3 to 4 hours before using.
Prepare the marinated tomato BLTs:
- Spread lightly-toasted bread slices on one side with butter and then mayonnaise.
- Place lettuce, marinated tomato slices, and bacon on top of the mayonnaise on two slices of the bread. Top with remaining bread slices.
- Serve immediately.

- You'll have leftover marinated tomatoes after preparing your BLTs. Cut the marinated tomato portion of the recipe in half if you don't want to have marinated tomato leftovers to enjoy plain (or in another round of BLTs!).
