Made with just 5 simple ingredients, coconut is allowed to shine as the one true star of these classic little cookies.  Take a whole lot of coconut, mix it with a little bit of flour, salt, vanilla, and sweetened condensed milk, and you've got yourself the makings for one decadent little coconut-y bite.

Sure, you can buy a package of these at the store.  But the flavor of homemade Coconut Macaroons is far superior.  In my opinion, it's not even a competition.  They're not difficult to make either -- Admittedly a little sticky, but homemade is easy for sure.

Our 10-year-old daughter and I made the batch in these photos together the other day.  And truth be told, she could totally handle making a batch completely on her own -- They are indeed that easy.  Trouble is they're so good, she could probably handle eating a batch completely on her own, too!

Our daughter also has her own name for these tasty little cookies.  With their rounded shape and shaggy coconut exterior, she thinks they look like bunny tails.  So rather than Coconut Macaroons, she calls them "Bunny Tail Cookies."

Clever.

And she's right -- They do indeed look like little bunny tails.  So why not call them by this adorable name?

But no matter whether you call them Bunny Tail Cookies or their real name, the fact remains Coconut Macaroons are one super tasty coconut treat.

You need just 5 simple ingredients to whip up a batch of homemade Coconut Macaroons:
  1. Sweetened coconut
  2. All-purpose flour
  3. Sweetened condensed milk
  4. Vanilla extract, and
  5. A bit of salt

Then start by stirring the flour, coconut, and salt together in a large bowl.  Next add in the sweetened condensed milk and vanilla, stirring everything until it's well blended.

The ingredients will come together to form a rather sticky, mostly-coconut dough.

To form the cookies, scoop 1 tablespoon-sized balls of dough.

I use a small 1-tablespoon cookie scoop, which makes it super easy to scoop out the dough and keep the cookies relatively close in size.

Drop the cookie dough onto a baking sheet lined with parchment paper that's been sprayed with non-stick cooking spray.

Why both parchment and non-stick cooking spray? -- Because these cookies will stick to the pan!

No matter what, you'll get some sticking to the pan with these homemade coconut macaroons.  As the sweetened condensed milk bakes, there's just no way around it creating some sticking.

If you don't have parchment paper, use wax paper instead -- and be sure to spray the wax paper with non-stick cooking spray, as well.  

Wax paper doesn't work quite as well as parchment, but it's workable.  And will definitely save you from scraping baked-on sweetened condensed milk from your pans.

How to Make Coconut Macaroons Image

Pop the cookies in the oven for about 12 to 15 minutes until they're set and the coconut is toasted.  

After baking, immediately remove the cookies from the baking sheet and place them on a rack to cool.  Removing the baked cookies from the pan as soon as they come out of the oven helps minimize sticking, too.

Ingredients:

  • 2/3  c. all-purpose flour
  • 5 1/2 c. sweetened coconut
  • 1/4 tsp. salt
  • 1 (14 oz.) can sweetened condensed milk
  • 2 tsp. vanilla extract

How to make Coconut Macaroons

  1. In a large bowl, stir together flour, coconut, and salt.
  2. Stir in sweetened condensed milk and vanilla until well blended.
  3. Line a baking sheet with parchment paper and spray the parchment with non-stick cooking spray.  Scoop 1 tablespoon-sized balls of dough onto the baking sheet.
  4. Bake at 350℉ for 12-15 minutes until the cookies are set and the coconut is toasted.  After baking, immediately remove cookies from the baking sheet and place on a rack to cool.
TRACEY'S NOTES:
  1. A cookie scoop makes it easy to scoop the cookie dough.  I use a small 1-tablespoon cookie scoop.
  2. These cookies will stick to the pan!  It's important to use parchment paper for this recipe, spray the parchment with non-stick spray, and to remove the cookies from the pan as soon as they come out of the oven to minimize sticking.
