If you're not a cranberry sauce fan but want a cranberry dish included for your Thanksgiving or Christmas dinner, this 7-Up Cranberry Jello Salad is a great option.  Or, if you are a cranberry sauce fan but like to serve up a tasty Jello salad too, this dish is also a great option.

The Jello layer is loaded with whole berry cranberry sauce surrounded in a raspberry Jello base, and given a little extra sweetness with a bit of 7-Up lemon-lime soda.  The creaminess and tang of its cream cheese-based topping pairs nicely with the sweetness of the Jello layer below.

I remember its deep red filling and pecan-studded top looking so pretty against that stark white dish.

Chopped pecans in both the Jello layer and sprinkled on top add a good textural crunch. 

I was first introduced to this recipe by my mother-in-law.  Until recently, she prepared our family Christmas dinner every year.  And every year, this 7-Up Cranberry Jello Salad was part of the Christmas dinner line-up.

She'd prepare and serve it in a beautiful white baking dish.  And I remember its deep red filling and pecan-studded top looking so pretty against that stark white dish.

It's such a classic dish that's so full of holiday memories.

Not only is 7-Up Cranberry Jello Salad perfect for any holiday dinner, it's really easy to make, too.

Start by dissolving 2 small packages of raspberry flavored Jello in a 9x13-inch baking dish.  But you don't just dissolve the Jello with water. -- Instead, you use a mixture of boiling water and 7-Up soda.

Once the raspberry Jello is dissolved, stir in 2 cans of whole-berry cranberry sauce, crushed pineapple, and some chopped pecans for crunch.

The 7-Up adds a nice little extra boost of sweetness and flavor to the Jello base.  Sprite or any other lemon-lime soda can be substituted, if you'd like.

Once the raspberry Jello is dissolved, stir in 2 cans of whole-berry cranberry sauce, crushed pineapple, and some chopped pecans for crunch.

A lot of times, Jello salads include chopped celery for crunch.  But if you like a cranberry Jello salad without celery, this recipe's a great one for you.

How to Make 7-Up Cranberry Jello Salad Image

Chill the Jello layer for a couple of hours until it's set.  And then whip up and spread on the salad's creamy cream cheese-based topping.

Just combine a block of cream cheese with a little bit of granulated sugar and some pineapple juice.  Then spread it evenly on top of the Jello.

The pineapple juice for the topping is the drained juice from the crushed pineapple used in the bottom Jello layer.  So when you drain that can of crushed pineapple, be sure to save the juice.

I place a strainer over a small bowl, and drain the canned pineapple through the strainer.  That way the bowl below captures all that wonderful juice for me to save to make the topping.

Sprinkle chopped pecans on top.  Or, decoratively arrange some unchopped pecan halves on top, if you'd prefer.

This adds another element of crunch to the salad, as well as adds some decoration to the top.

Refrigerate the prepared Jello salad overnight to give it time to set up fully.

Then you're ready to serve up the creamy cranberry deliciousness!

ingredients:

Cranberry Jello Layer:
  • 1 c. 7-up soda
  • 1 c. boiling water
  • 2 ( 3 oz.) packages raspberry Jell-o
  • 2 (14 oz.) cans whole berry cranberry sauce
  • 1 (20 oz.) can crushed pineapple, drained (BUT reserve the juice)
  • 1 c. chopped pecans
Topping:
  • 1 (8 oz.) package cream cheese, softened
  • 1 T. granulated sugar
  • 1/4 c. pineapple juice (reserved from draining the can of crushed pineapple)
  • about 1/4 c. pecan pieces and/or chopped pecans

How to cook 7-Up Cranberry Jello Salad

Prepare the Cranberry Jello Layer:
  1. Place Jello in a 9x13-inch baking dish.
  2. In a saucepan, bring 7-Up and water to a boil.  Carefully pour into the baking dish with the Jello.  Use a whisk or fork to  whisk hot liquid and Jello together until Jello is completely dissolved.
  3. Stir in cranberry sauce.  Then add pineapple and chopped pecans; stir until well combined.
  4. Refrigerate and allow to set, about 2-3 hours.
Prepare the Topping:
  1. Once the Jello is set, use an electric mixer to cream together the softened cream cheese, sugar, and reserved pineapple juice until combined and smooth.
  2. Spread topping evenly over Jello layer.  Sprinkle with pecans.
  3. Cover and refrigerator overnight to allow to set completely.
TRACEY'S NOTES:
  1. This recipe can easily be halved and prepared in an 8x8-inch baking dish if you'd like a smaller amount.
  2. Sprite or other lemon-lime soda can be substituted for the 7-Up.

  1. Can you make this without the soda (7-up) and just use sparkling water (soda water) instead? It would make it less sweet, but do you think it would still taste good?

    1. We have never made it with sparkling water, it would have less sugar. Part of the fun of cooking is tweaking recipes; if you make it with sparkling water let us know how it turns out.

  2. Well, I ended up making it with Sprite. Eventually I may try the sparkling water! I did enjoy it--brought it to a potluck dinner.
