How to cook Snickers Cupcakes
Prepare the Cupcakes:
- In a bowl, mix flour, sugar, baking powder, baking soda, and cocoa together with a wire whisk.
- Add remaining ingredients. Beat on medium until combined.
- Spoon batter into 23 cupcake liners, filling just 2/3 full. Gently push a frozen Snickers Miniature bar into the center of the batter (just until it’s barely covered) and smooth the surface making sure to cover the candy bar with batter.
- Bake at 350 degrees for 22-24 minutes, or until a wooden pick inserted in the center comes out clean.
- Allow to cool in the pan for about 5 minutes; remove cupcakes to a cooling rack. Cool completely before frosting. Frost with caramel frosting.
Prepare the Caramel Frosting:
- Cream butter in the bowl of an electric or stand mixer for about 1-2 minutes. Add sugar, 1 cup at a time, and mix thoroughly for about 15-30 seconds after each addition.
- Add vanilla extract, salt and caramel syrup and combine well. Beat on medium-high speed for about 3-4 minutes. Give it a taste and decide if you want to add in a bit more caramel syrup, about 1 tablespoon at a time. For thicker frosting you can gradually add in a little more sugar.
- Pipe frosting onto cupcakes. Garnish with chopped Snickers bars and a drizzle of caramel syrup.
