Cranberries aren't just for cranberry sauce!  Enjoy them in this Cranberry Apple Crunch, too. It's a tart, cinnamon and pecan-laced crisp that's perfect as a fall or Thanksgiving side dish or dessert.

As I'm sitting here thinking about writing about this dish, I can't help but have a vision of a TV infomercial playing in my head, because this dish is so versatile.

Cranberry Apple Crunch is a creative cranberry fall'ish, Thanksgiving'ish side dish ... BUT WAIT!  THERE'S MORE! ... It's perfect as a breakfast or brunch dish, too ... BUT WAIT!  THERE'S MORE!

When served up with a scoop of vanilla ice cream, it's also a delicious dessert.  It's a casserole, it's a crisp, it's a crunch ... YOUR GET THREE DISHES FOR THE PRICE OF ONE!  {but only if you call in the next 10 minutes!}

This dish truly can serve as a fabulous side dish for turkey or ham, as a breakfast or brunch cranberry treat, or as a dessert, much like traditional apple crisp.

Okay, just kidding on that last part about only in the next 10 minutes.  Because you can certainly make this tasty crunch anytime cranberries are around.

As I've said in the past, except for our family's Thanksgiving Cabernet Cranberry Sauce or Grand Marnier Cranberry Sauce (we switch back and forth between the two), I'm not a huge cranberry sauce fan. So when it comes to enjoying cranberries, I take my cranberry fill in forms other than sauce.  Like this tasty Cranberry Apple Crunch.

And, seriously, this dish truly can serve as a fabulous side dish for turkey or ham, as a breakfast or brunch cranberry treat, or as a dessert, much like traditional apple crisp.

Recipes for this Cranberry Apple Crunch appear, I kid you not, in no less than six of my church/womens' club cookbooks.  Most refer to it as a "casserole," and others call it a "crisp" or "crunch."  Most often I've seen it titled as "Cranberry Apple Casserole," but I prefer the title of "crunch."

But no matter what you call it, one's thing for sure -- this dish is super easy to make.

All you do to pull this dish together is toss some fresh cranberries, chopped apples, sugar, and cinnamon together in a baking dish.

Next, give everything a good toss to get it all mixed together.

You want to get the cranberries and apples well coated in the cinnamon and sugar.

Then mix together a combination of oats, flour, brown sugar, chopped pecans, and butter to make the topping.

Sprinkle the topping evenly over the prepared cranberries and apples, just as you would for a traditional apple crisp.

Pop the pan in the oven and bake it up until the topping is light golden brown and the cranberries and apples are bubbly around the edges.

The cranberry and apples will be nice and tender and juicy, while the topping will add a wonderful crisp texture.

ingredients:

Filling:
  • 2 c. fresh cranberries, rinsed
  • 3 c. peeled chopped tart apple (such as Rome, McIntosh, or Granny Smith)
  • 1 c. sugar
  • 1 tsp. ground cinnamon
  • Pinch of ground cloves
  • Pinch of salt
Topping:
  • 1/2 c. brown sugar
  • 1/3 c. all-purpose flour
  • 1 c. old-fashioned oats
  • 3/4 c. chopped pecans
  • 1/2 c. (1 stick) butter, melted

instructions:

How to cook Cranberry Apple Crunch

Prepare the filling:
  1. Place cranberries, chopped apple, and sugar in the bottom of a 9x13" baking dish that has been lightly sprayed with non-stick cooking spray.
  2. Sprinkle the ground cinnamon, ground cloves, and salt on top. 
  3. Toss to coat.
Prepare the topping & bake:
  1. Melt the butter in a mixing bowl. Add remaining topping ingredients and toss to combine. 
  2. Sprinkle topping evenly over the fruit mixture.
  3. Bake, uncovered, at 325 degrees for 1 hour.
  4. Serve warm or cold, as a side dish with turkey or ham, as a breakfast/brunch dish, or as a dessert with ice cream or whipped cream.
