There are a handful of candies that I absolutely cannot resist.  If they're around, my willpower is zero.  Like Twix.  Peanut M&Ms.  And Kit Kats.

But one more candy bar tops that can't-resist list ~ the ooey-gooey chocolate-covered-caramel-and-peanut goodness of Snickers.  And there's only one way to make that Snickers goodness even better ...
... and that's to turn it into a scrumptious baked treat!

Like Snickers Cupcakes, of course.

Rich chocolate cake with a Snickers surprise inside, creamy caramel frosting, and chopped Snickers with caramel drizzle topping make Snickers Cupcakes a truly can't-resist treat.

Seriously.  They'll take your willpower to sub-zero.

Snickers Cupcakes
(Printable recipe)
  • 1 1/2 c. all-purpose flour
  • 1 1/2 c. granulated sugar
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 c. cocoa powder
  • 1 c. milk
  • 2 eggs
  • 2 tsp. vanilla extract
  • 1/2 c. canola or vegetable oil
  • 24 to 30 Snickers miniatures, frozen
  • Caramel frosting {recipe below}
  1. In a bowl, mix flour, sugar, baking powder, baking soda, and cocoa together with a wire whisk.
  2. Add remaining ingredients. Beat on medium until combined.
  3. Spoon batter into 23 cupcake liners, filling just 2/3 full. Gently push a frozen Snickers Miniature bar into the center of the batter (just until it’s barely covered) and smooth the surface making sure to cover the candy bar with batter.
  4. Bake at 350 degrees for 22-24 minutes, or until a wooden pick inserted in the center comes out clean.
  5. Allow to cool in the pan for about 5 minutes; remove cupcakes to a cooling rack. Cool completely before frosting. Frost with caramel frosting.

Caramel Frosting:
  • 1 c. unsalted butter, softened
  • 4 c. confectioner's sugar
  • 2 tsp. vanilla extract
  • 1/2 c. caramel ice cream topping, plus more for drizzling
  • 1/4 tsp. salt
  1. Cream butter in the bowl of an electric or stand mixer for about 1-2 minutes. Add sugar, 1 cup at a time, and mix thoroughly for about 15-30 seconds after each addition.
  2. Add vanilla extract, salt and caramel syrup and combine well. Beat on medium-high speed for about 3-4 minutes. Give it a taste and decide if you want to add in a bit more caramel syrup, about 1 tablespoon at a time. For thicker frosting you can gradually add in a little more sugar.
  3. Pipe frosting onto cupcakes. Garnish with chopped Snickers bars and a drizzle of caramel syrup.
