{Skinny} White Chocolate Pumpkin Nog

You don't have to wait 'til Christmas to enjoy nog.  Nope.  You can enjoy a rich and delicious 'happy Fall' glass of nog with this easy White Chocolate Pumpkin Nog.  Oh, and without the usual nog-induced guilt too, 'cause this fall version is even skinny.  Bonus.

Happy Fall, y'all!  One of my favorite things about Fall ... aside from the wonderful weather we enjoy here in North Carolina ... is pumpkin everything.  We see pumpkin everywhere we turn during Fall.  And I love it.  So when I came across a recipe for pumpkin nog, I just knew I had to try it.

And when my friends at Tastebuds Popcorn came up with Pumpkin Spice Latte popcorn, I just knew I had to try that, too!  Well, guess what?  Tastebuds Popcorn and I want to give YOU a chance to try it, too.  With a little popcorn give-away.  You know, just our way of saying happy Fall.

I came across the original recipe for this pumpkin nog idea in Where Women Cook magazine , who was sharing it from the cookbook Hungry Girl 1-2-3: The Easiest, Most Delicious, Guilt-Free Recipes on the Planet.

I was intrigued.

I mean, Pumpkin Nog?  Who would have thought?  {Well, apparently 'Hungry Girl.  But who else  would have thought, right??}

Better yet, White Chocolate  Pumpkin Nog?

Even better still, Skinny  White Chocolate Pumpkin Nog?

Oh yes, it had to be tried.

And, oh man, is this stuff good.

If you like nog, and you like pumpkin, ... and you like yummy stuff ... give this a try.  It's such a seems-decadent-but-it's-not, fabulous fall treat you'll definitely want to add to your 'happy fall, pumpkin everything' list.

White Chocolate Pumpkin Nog
(Printable recipe)

  • 5 c. light vanilla soy milk {regular milk can be used just fine}
  • 1 small package instant sugar-free white chocolate pudding mix
  • 3/4 c. 100% pure pumpkin puree
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. pumpkin pie spice
  • 1/4 tsp. ground nutmeg
  • pinch salt
  1. Combine all ingredients and whisk until smooth. Refrigerate for about 2 hours before serving to chill and allow the mixture to thicken slightly.
  2. When ready to serve, sprinkle each serving with a bit of cinnamon and nutmeg.  For a spiked version, add a splash of rum.
NOTE:  The result, as is, is plenty sweet enough for me.  If you'd like it a tad bit sweeter, add about 1 tablespoon Stevia, Splenda, or granulated sugar.
