It takes just 6 simple ingredients to make these mini crescent roll cinnamon rolls, and I'm betting you already have 5 of them in your pantry and refrigerator!

For the cinnamon rolls themselves, you'll need:
  • Crescent Rolls - An 8-ounce tube of Crescent Rolls serves as the recipe's easy dough.
  • Brown sugar - Creates the base of the rolls' sweet cinnamon-sugar filling. Light brown sugar delivers up fabulous flavor, however dark brown sugar will work as well.
  • Cinnamon - Ground cinnamon brings the signature cinnamon flavor to these tasty little bites.

For the glaze, you'll need:
  • Powdered sugar - Creates the base of the classic sweet glazed drizzled on top of the cinnamon rolls.
  • Vanilla extract - Nicely flavors the glaze. Use pure vanilla extract, rather than imitation, for the best flavor and result.
  • Milk - Thins the glaze to a drizzling consistency. Water can be substituted for milk, if you'd like.

How to Make Crescent Cinnamon Roll Bites:

To get a batch of Crescent Cinnamon Roll Bites started, line a baking sheet with parchment paper or foil and spray it with non-stick cooking spray.

Unroll a tube of crescent roll dough onto a cutting board or other work surface, separate the dough into 4 rectangles, and firmly press together the diagonal perforations to seal them. Then generously sprinkle the dough rectangles with brown sugar-cinnamon filling, going all the way to the edges with the filling.

Starting from the short side, tightly roll each crescent dough rectangle into a log (jelly roll-style).

Cut each log into 5 roughly-equal pieces. Use a serrated knife and a gentle sawing motion for the best result.

Place the pieces, cut side up, on the prepared baking sheet.

Some of the brown sugar-cinnamon mixture will fall out while cutting and moving the cinnamon roll pieces to the baking sheet. -- Don't worry about it, it's normal.

Pop the pan in the oven and bake the cinnamon roll bites for about 9-10 minutes, until they're nice and golden brown.

Once the baked bites are out of the oven, allow them to cool for about 30 seconds to a minute. Then use a small spatula to gently unstick them from the parchment paper/foil.

If you let the baked cinnamon rolls sit on the pan for more than about a minute before moving them, the warm sugar will harden and stick to the parchment/foil and the cinnamon rolls will become very difficult to remove.

While the crescent cinnamon rolls bake, mix up the glaze by stirring together some powdered sugar, vanilla extract, and milk until smooth.

Ingredients

For the Cinnamon Rolls:
  • 1 (8 oz.) tube crescent rolls
  • 1/3 c. brown sugar
  • 2 1/2 tsp. cinnamon
For the Glaze:
  • 2/3 c. powdered sugar
  • 1/4 tsp. vanilla extract
  • 1 T. + 1 tsp. milk

Instructions

Prepare the Cinnamon Rolls:
  1. Line a baking sheet with parchment paper or foil. Spray with non-stick cooking spray. Set aside.
  2. Unroll crescent roll dough onto a cutting board or other work surface. Separate into 4 rectangles and firmly press together the diagonal perforations to seal them.
  3. In a small bowl, combine brown sugar and cinnamon, stirring until well mixed. Sprinkle evenly over crescent dough rectangles.
  4. Starting from the short side, tightly roll each crescent dough rectangle into a log (jelly roll-style).
  5. Cut each log into 5 roughly-equal pieces. Place on prepared baking sheet, cut side up.
  6. Bake at 375 for 9-10 minutes, until golden brown.
  7. Remove from oven and allow to cool for about 30 seconds to 1 minute. Then use a small spatula to gently unstick from the parchment paper/foil.
  8. Drizzle with glaze.
Prepare the Glaze:
  1. While the Crescent cinnamon rolls bake, stir together the powdered sugar, vanilla extract, and milk until smooth.
  2. Use a spoon to drizzle over warm rolls.
TRACEY'S NOTES:
  1. When cutting the cinnamon-filled dough rolls into pieces, use a serrated knife & a gentle sawing motion for the best result.
  2. Some of the brown sugar-cinnamon mixture will fall out while cutting and moving the cinnamon roll pieces to the baking sheet. -- That's normal.
  3. After removing the cinnamon rolls from the oven, it is important to use a small spatula to gently unstick them from the parchment paper/foil. If you let the baked cinnamon rolls sit on the pan for more than about a minute before moving them, the warm sugar will harden and stick to the parchment/foil and the cinnamon rolls will become very difficult to remove.
  4. When making the glaze, you can add more milk, about 1/4 teaspoon at a time, if needed to reach good drizzling consistency. Just be careful to not add too much milk at once, as the glaze will thin rather quickly.
  5. These mini Crescent cinnamon rolls are delicious served both warm or at room temperature.
