Vanilla & Chocolate No-Bake Eclair Dessert Filling Ingredients:
For the dessert's pudding filling layers, you'll need:
- Chocolate instant pudding mix
- Vanilla instant pudding mix
- Milk
- Cool Whip non-dairy whipped topping
- Graham crackers
Vanilla & Chocolate No-Bake Eclair Dessert Topping Ingredients:
For the dessert's fudgy chocolate topping, you'll need:
- Granulated sugar
- Unsweetened baking cocoa
- Milk
- Butter
- Vanilla extract
How to Make Vanilla & Chocolate No-Bake Eclair Dessert:
Luckily for all of us, this creamy no-bake deliciousness is not hard to make. Some whisking, a little layering, and a small bit of stovetop cooking is all there is to it. Well, except for the waiting -- waiting while everything sets up overnight in the refrigerator may just be the hardest part of making this dessert! But believe me, the final result is well worth the wait.
To whip up a pan of Vanilla & Chocolate No-Bake Eclair Dessert, start by lining the bottom of a 9x13-inch pan with a layer of graham crackers. Break some of the graham crackers, as needed, to completely cover the pan's bottom.
Then mix together a package of instant chocolate pudding mix and some milk, whisking it until they're well combined and beginning to thicken. Stir in some Cool Whip non-dairy whipped topping to give the chocolate pudding a nice fluffy texture.
Spread the chocolate pudding mixture evenly over the graham crackers in the bottom of the pan. Then top with another layer of graham crackers, completely covering the chocolate pudding.
Repeat this process with a package of vanilla instant pudding, topping the vanilla layer with graham crackers as well.
Once the layers are done, prepare the chocolate topping.
Place some granulated sugar, baking cocoa, and milk in a medium-sized saucepan. Over medium-high heat, bring the mixture to a full rolling boil. Then boil the topping for 1 minute, stirring it very frequently. For the topping to set properly on the finished dessert, be sure the mixture comes to a full rolling boil before you start timing the 1 minute boil.
Remove the saucepan from the heat and cool the chocolate mixture for one minute. Then add in some butter and vanilla extract, stirring until the butter is melted and fully incorporated.
Immediately pour the warm chocolate topping over the top layer of graham crackers, spreading evenly to completely cover the graham crackers.
Next comes the hardest part. -- Cover the Vanilla & Chocolate No-Bake Eclair Dessert and chill it in the refrigerator overnight to allow everything to set and meld together.
It's tempting to shorten the chill time, but overnight truly is best to let the graham crackers nicely soften and allow the dessert to fully "come together."
Once chilled, you're good to go with diving into this super tasty two-tone delight!

Ingredients
Filling:
- 1 (3.4 oz.) box vanilla instant pudding
- 1 (3.4 oz.) box chocolate instant pudding
- 2 1/2 c. milk, divided
- 1 (8 oz.) container Cool Whip non-dairy whipped topping {or 3 c. homemade whipped cream}
- 1 (14.4 oz) box graham crackers
Topping:
- 1/3 c. unsweetened cocoa
- 1 c. granulated sugar
- 1/4 c. milk
- 1/2 c. butter
- 1 tsp. vanilla extract
Instructions
Prepare the Filling:
- Place a layer of graham crackers in a 9x13" dish, completely covering the bottom.
- Combine dry chocolate pudding mix and 1 & 1/4 cups milk; beat until well mixed and beginning to thicken. Stir in 1/2 of the Cool Whip.
- Spread chocolate pudding mixture evenly over the graham crackers. Top with another layer of graham crackers, completely covering the chocolate pudding.
- Combine dry vanilla pudding mix and 1 & 1/4 cups milk; beat until well mixed and beginning to thicken. Stir in remaining 1/2 of the Cool Whip.
- Spread vanilla pudding mixture evenly over the graham crackers. Top with a final layer of graham crackers, completely covering the vanilla pudding.
Prepare the Topping:
- In a medium-sized saucepan, bring cocoa, granulated sugar, and milk to a full rolling boil over medium-high heat; boil 1 minute, stirring very frequently.
- Remove from heat and cool one minute. Add butter and vanilla; stir until butter is melted.
- Immediately pour chocolate topping over the top layer of graham crackers. Spread evenly to completely cover graham crackers.
- Cover and refrigerate over night.
TRACEY'S NOTES:
- Keep in mind when making it, this dessert must chill overnight. Chilling overnight allows everything to meld together and the graham crackers to soften.
- Break some of the graham crackers, as needed, to completely fill the pan when making each graham cracker layer.
- For the pudding mixes, be sure they're instant and not the cooked kind. Also, sugar-free versions work just fine, and actually seem to make the chocolate and vanilla pudding layers a bit fluffier than the regular full-sugar puddings.
- As a shortcut, you can simply slather on a tub of store-bought chocolate frosting as the topping. We do, however, feel the homemade chocolate topping is so much better and worth the effort to make.
