With a delicious mix of pineapple juice, coconut rum, vanilla vodka, amaretto, and grenadine, it's just perfect for summer sipping. And with its "sunrise" layered effect? -- It's sure one beautiful cocktail, too.

Sweet fruity cocktails are the best for summertime.  And this Pineapple Upside-Down Cocktail is no exception.

With its delicious mix of pineapple juice, coconut rum, vanilla vodka, amaretto, and grenadine, it's jam packed with sweetness and fabulous fruity flavors. Which makes it just perfect for summer sipping. -- Whether that be poolside, beachside, cozied up on the screened-in porch, or anywhere else for that matter.

The layered "sunrise" effect of this cocktail mimics the make-up of classic pineapple upside-down cake, for which this tasty pineapple-based cocktail is named.  The red of the grenadine layer represents the cake's signature dotting of maraschino cherries, while the yellow layer stands for the cake itself.

And while they look complicated, did you know beautiful layered-effect drinks are actually super easy to make?

That beautiful layering effect is created by simply very slowly pouring grenadine syrup down the side of the glass after the other ingredients are already combined together.

The grenadine sinks to the bottom of the drink, creating the striking red hue at the bottom.  The drink's combination of pineapple juice and liquors create the yellow band at the top, while a little intermingling of everything together creates the variegated effect throughout the middle.

The result?  A stunning layering that beautifully mimics traditional pineapple upside-down cake coloring.

Pineapple Upside-Down Cocktail Ingredients:

It takes six pretty simple ingredients to whip up a tasty Pineapple Upside-Down Cocktail. To make one, you'll need:

  • Pineapple juice
  • Coconut rum
  • Vanilla vodka
  • Amaretto
  • Fresh lime juice, and
  • Grenadine

Grenadine is a sweet bright red syrup made from pomegranates, and is best known for giving the classic Shirley Temple drink its characteristic bright pink color and sweet taste.  It's also used to flavor other fruity cocktail favorites like Caribbean Rum Punch and our favorite Malibu Sunrise.  You can find grenadine syrup in a small bottle in the drink mixers section of the grocery store, or order grenadine online from Amazon.

In addition to the six main ingredients, you can also add on some maraschino cherries and pineapple chunks for garnish, if you'd like. We think maraschino cherries with stems are a nice looking touch.



How to Make a Pineapple Upside-Down Cocktail:

Layered-effect drinks like this Pineapple Upside-Down cocktail are surprisingly easy to make.

Start by combining the cocktail's base ingredients. In this case, combine pineapple juice, coconut rum, vanilla vodka, amaretto, and lime juice in a pitcher or large measuring cup. 

Then pour the mixture into glasses.

Once the base mixture is ready in the glass, slowly pour grenadine in down the side of the glass -- without stirring or disturbing it.

The grenadine will settle on the bottom of the glass to create that beautiful layered effect.

Add a pineapple and maraschino cherry garnish, if you'd like, and then you're good to go with enjoying this delicious drink.

Ingredients

  • 3 c. pineapple juice, chilled
  • 1 oz. coconut rum
  • 1 oz. vanilla vodka
  • 1 oz. amaretto
  • 2 tsp. fresh lime juice
  • 1 oz. grenadine
  • pineapple wedges & maraschino cherries for garnish

Instructions

  1. In a pitcher or large measuring cup, combine pineapple juice, coconut rum, vanilla vodka, amaretto, and lime juice. Pour into 2 glasses, dividing evenly.
  2. Slowly pour 1/2 ounce grenadine down the side of each glass to create the layered effect.
  3. Garnish each with pineapple and maraschino cherries.

  4. Incredible recipe! Thanks. However, I made it with 3 ounces of pineapple juice instead of 3 cups. I'm thinking that might be an error so heads up.

    But great stuff either way, I'm sure! I like 'em stronger!

    1. We are glad you enjoyed the cocktail. The recipe is written for 3 cups but one can adjust the amount of pineapple juice to make a stronger drink. We typically use 2 to 3 cups of pineapple juice.
