easier. Made mainly with pantry-staple ingredients and requiring just
a short simmer, this is one tasty soup that doesn't take all day.
I came across the original base recipe for this super easy soup in a pile of
my grandmother's recipes I inherited after her passing a couple of years
back. As with pretty much all her recipes, the printed-out page had
her handwritten notes -- And in the upper right corner she'd labeled this
recipe as "Excellent!"
Upon my first pass at making it, I agreed with Gram that this turkey soup
recipe was "excellent" -- on the ease of prep front. But with flavor?
-- We thought it needed a little more pizazz.
Requiring just a short simmer, this is one tasty soup that doesn't take all day.
So I set about making a few tweaks to Gram's recipe. -- Adding some
fresh garlic, sauteing the garlic and onion together before adding the
remaining ingredients, and upping the seasoning to amp up the soup's
flavor. All while keeping the soup's prep quick and easy, and
achieving more richness without increasing the simmer time.
It's a result we're very happy with. And I think my grandmother would
be, too. She might just change her handwritten recipe label to
"Excellent!!" -- with two exclamation marks.
What makes this turkey noodle soup recipe quick?
So, what makes this turkey noodle soup recipe quick, as its name
states? Three things make its prep super fast. It:
- Takes advantage of frozen mixed vegetables -- Which means very minimal chopping & very quick prep.
- Uses chicken broth accented with poultry seasoning as its base, giving nice flavor without a long, slow simmer.
- Requires a short simmer of just 15 minutes -- Cooking the noodles during this simmer time.
Quick Turkey Noodle Soup Ingredients
Quick Turkey Noodle Soup doesn't require a lot of fancy ingredients.
Some leftover turkey, a handful of basic pantry (and freezer) staples, and
some fresh parsley come together beautifully to create this easy soup.
To whip up a pot, you'll need:
- Chopped turkey - Leftover turkey works great!
- Frozen mixed vegetables - The basic combo of frozen mixed veggies saves a lot of chopping for this soup's prep.
- Onion & garlic - Chopped onion and minced fresh garlic are sauteed together to bring richness and depth of flavor to the soup's base.
- Fresh parsley - Parsley isn't just ornamental, it adds great flavor as well. Use fresh parsley in this recipe if at all possible. If you just don't have any on hand, substitute dried parsley -- be aware, however, dried parsley won't impart the same level of flavor as fresh.
- Chicken broth - Use basic canned chicken broth -- I actually buy it in the box for this recipe, since you need several cups. Swanson is our favorite brand.
- Seasonings - Poultry seasoning and dried thyme amp up the flavor of the chicken broth base, helping create nice flavor even with this soup's short simmer time. Also season the soup with a little salt and pepper, to taste.
- Egg noodles - Any variety of egg noodles works. We like extra-wide best.
How to Make Quick Turkey Noodle Soup
To whip up a pot of Quick Turkey Noodle Soup, start by sauteing some onion and garlic. This gives a nice base of flavor to the soup.
Melt a little butter in a large saucepan or Dutch oven over medium heat. Add some chopped onion and minced garlic, and let them cook for about 5 minutes until they're softened.
Then toss in a little chopped fresh parsley, and saute it for about 30 seconds to release its flavor.
Add chopped turkey, some thawed frozen mixed vegetables, chicken broth, a good dose of poultry seasoning, some dried thyme, salt and pepper to the pot and bring it all to boil.
Once the soup mixture comes to a boil, add in the egg noodles. Return everything to a boil again, and then let the soup simmer for 15 minutes until the noodles are cooked and tender.
Give the soup a taste and season with a bit more salt and pepper, to taste.

- 1/4 c. chopped fresh parsley
- 2 c. chopped cooked turkey
- 2 c. frozen mixed vegetables, thawed
- 9 c. chicken broth
- 1/2 tsp. poultry seasoning
- 1/2 tsp. dried thyme
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2c. uncooked egg noodles
Instructions
- In a large saucepan or Dutch oven, melt butter over medium heat. Add onion and garlic; saute until softened, about 5 minutes. Add parsley; saute about 30 seconds.
- Add turkey, mixed vegetables, chicken broth, poultry seasoning, dried thyme, salt, and pepper; stir to combine.
- Increase heat and bring to a boil.
- Stir in egg noodles; return to a boil.
- Reduce heat to medium. Simmer 15 minutes, stirring occasionally, until noodles are cooked and tender.
- Season with additional salt and pepper, to taste.
