Our 10-year-old daughter has absolutely fallen in love with this tasty Snickerdoodle bread.  So much so, she even requested it be made for her birthday a few weeks back.  And I swear, she would eat an entire loaf in one sitting if we'd let her.

Modeled after classic Snickerdoodles cookies, this bread is loaded with fabulous cinnamon flavor.

But what exactly is a Snickerdoodle, you ask?

Snickerdoodles are a unique and distinct cookie generally thought to be of German origin.  And when it comes to cookies, there's just nothing quite like them.  Three characteristics truly make Snickerdoodles unique when it comes to the cookie world:
  1. Soft, pillowy texture
  2. Strong cinnamon flavor, and
  3. Tang

Modeled after classic Snickerdoodles cookies, this bread is loaded with fabulous cinnamon flavor.

So how does Snickerdoodle bread stack up against these three unique Snickerdoodle cookie characteristics?

  1. Soft, pillowy texture -- Obviously bread can't be pillowy like a cookie.  But Snickerdoodle Bread comes through with the softness, indeed.  It bakes up with a wonderfully soft and very tender texture.
  2. Strong cinnamon flavor -- It's there, for sure!  Ground cinnamon is mixed into the bread batter itself.  And then another tasty dose of cinnamon is added with the bread's cinnamon-sugar swirl through the middle, and its cinnamon-sugar crumb topping.  Oh yes, this bread's got the cinnamon flavor covered.
  3. Tang -- Sour cream in the batter does indeed bring Snickerdoodle's characteristic tang.  It's not as pronounced as in the cookies themselves, but a touch of tang is there, indeed.

It makes for the perfect sweet treat for cinnamon lovers to enjoy for breakfast, brunch, or an anytime snack.

To whip up a loaf of Snickerdoodle Bread, start by mixing up the cinnamon-sugar mixture that's used for both the cinnamon-sugar swirl in the middle and the bread's crumb topping.

In a small bowl, mix together brown sugar and a hefty dose of ground cinnamon until they're well combined.  Then set this aside for a bit to prepare the bread's batter.

Mix up the bread's batter, including two teaspoons of vanilla extract and a teaspoon of ground cinnamon for fabulous flavor, and a touch of sour cream to bring in Snickerdoodles' characteristic tang.


Then pour 1/2 of the batter into a greased loaf pan.
Sprinkle 1/2 of the prepared cinnamon-sugar mixture evenly over the batter, covering the batter completely.

Add the remaining batter to the loaf pan, gently spreading it evenly over the cinnamon-sugar layer.

Then, add some softened butter to the remaining cinnamon- sugar mixture, cutting the butter in with a fork to make small crumbs.



Sprinkle these cinnamon-sugar crumbs evenly over the top of the batter. -- The crumbs won't completely cover the batter like the first sprinkling of cinnamon-sugar did, and that's okay.  This will create the kind of dotted look on the top of the baked bread.


We've found Snickerdoodle Bread to have a much better, more pronounced cinnamon flavor after the bread has completely cooled and the flavors have had time to meld.
Also, adding butter to make "crumbs" for the bread's cinnamon-sugar topping keeps the top of the bread soft.  

You can simply sprinkle on the cinnamon-brown sugar mixture without butter added if you'd like, but the dry cinnamon-sugar will form a crumbly firm crust on the top of the bread. We've tried it both ways, and much prefer the softer "crumb" topping.

Pop the loaf pan in the oven and bake the bread for about 50 to 55 minutes, and then you've got yourself one tender and tasty loaf of Snickerdoodle Bread!

Let the bread cool completely before enjoying.  We've found Snickerdoodle Bread to have a much better, more pronounced cinnamon flavor after the bread has completely cooled and the flavors have had time to meld.  

In fact, we recommend allowing the bread to set overnight before enjoying for the absolute best flavor.

Ingredients:

Cinnamon-Sugar Swirl & Topping:
  • 3 T. brown sugar
  • 2 tsp. ground cinnamon
  • 1 T. butter, softened
Snickerdoodle Bread Batter:
  • 1 1/2 c. all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/2 c. butter, softened
  • 1 c. granulated sugar
  • 2 eggs
  • 2 tsp. vanilla extract
  • 1/2 c. sour cream

Instructions:

Prepare Cinnamon-Sugar Swirl & Topping:
  1. In a small bowl, mix together brown sugar and the 2 teaspoons ground cinnamon until well combined.
  2. Set aside.  DO NOT MIX IN THE BUTTER AT THIS TIME.
Prepare Snickerdoodle Bread:
  1. In a small bowl, mix together flour, baking powder, salt, and the 1 teaspoon cinnamon.  Set aside.
  2. In a large bowl, cream together the 1/2 cup softened butter and granulated sugar.
  3. Add eggs, one at a time, mixing after each addition.  Mix in vanilla extract and sour cream.
  4. Add flour mixture to wet ingredients, and stir until just combined.
  5. Pour 1/2 of the batter into a greased 9x5-inch loaf pan.
  6. Sprinkle 1/2 of the prepared cinnamon-sugar swirl/topping mixture evenly over the batter, covering it completely.
  7. Add remaining batter to the loaf pan, gently spreading it evenly over the cinnamon-sugar layer.
Add Cinnamon-Sugar Topping & Bake:
  1. Add the 1 tablespoon softened butter to remaining cinnamon- sugar mixture. Cut butter in with a fork to make small crumbs.
  2. Sprinkle cinnamon-sugar crumbs evenly over the top of the batter. (Crumbs won't completely cover the batter like the first sprinkling of cinnamon-sugar did.)
  3. Bake at 350℉ for 50-55 minutes, until a wooden pick inserted in the center comes out clean.
  4. Cool in pan for 10 minutes, then turn out onto a cooling rack to cool completely.
TRACEY'S NOTES:
  1. Adding butter to make "crumbs" for the bread's cinnamon-sugar topping keeps the top of the bread soft.  You can simply sprinkle on the cinnamon-brown sugar mixture without butter added if you'd like, but it will form a crumbly firm crust on the top of the bread. We much prefer the softer "crumb" topping.
  2. Snickerdoodle bread has a much better, more pronounced cinnamon flavor after the bread has completely cooled and the flavors have had time to meld.  We recommend allowing Snickerdoodle bread to set overnight before enjoying.
  3. Store this bread at room temperature.
