Have you heard of a fun and tasty Tequila Sunrise?  Well, this Malibu Sunrise Cocktail is the same layered fun -- but with super delicious, coconut-infused Malibu Rum instead of tequila.  And my oh my, it's delicious.

And did you know these cool-looking layered drinks are actually really easy to make?  I mean, like super easy.

That beautiful signature sunrise effect is created by simply very slowly pouring grenadine syrup down the side of the glass after the other ingredients are already combined together.

This drink's sunrise-mimicking layered effect is absolutely worthy of its Malibu Sunrise name. 

The grenadine sinks to the bottom of the drink, creating the striking red hue at the bottom.  The drink's combination of orange and pineapple juice creates the yellow band at the top, while a little intermingling of everything together creates the beautiful variegated effect throughout the middle.

The result?  A sunrise-mimicking layered effect that's absolutely worthy of its Malibu Sunrise name.

With its refreshing fruity flavor, this drink is great for summer sipping poolside or as an anytime or brunch cocktail, as well.

It takes just four simple ingredients to make a Malibu Sunrise Cocktail.  Though the drink itself looks fancy, there's nothing fancy needed to create it.

Its four simple ingredients are:
  • pineapple juice
  • orange juice
  • Malibu coconut rum, and
  • grenadine

Grenadine is a sweet bright red syrup made from pomegranates, and is best known for giving the classic Shirley Temple drink its characteristic bright pink hue and sweet taste.  It's also used to flavor other fruity cocktail favorites like Caribbean Rum Punch and the Betsie Temple cocktail.  You can find grenadine syrup in a small bottle in the drink mixers section of the grocery store, or order grenadine online from Amazon.

In addition to the four main ingredients, you can also add on some maraschino cherries, pineapple chunks, and/or orange slices for garnish, if you'd like.

To make a Malibu Sunrise cocktail, simply place a few ice cubes in a tall collins-style cocktail glass. Then pour in pineapple juice, orange juice, and Malibu coconut rum.  Stir this together until it's well combined.

Note that up to this point, this part of the drink can be prepared in advance or in a larger batch if you'd like. Just combine the pineapple juice, orange juice, and Malibu coconut rum together and refrigerate it. Pour it over ice in individual glasses at the time of serving.

Once the Malibu rum mixture is ready in a glass, slowly pour grenadine in down the side of the glass -- without stirring or disturbing it.

Don't stir the cocktail at all after you've added the grenadine -- the grenadine is meant to settle on the bottom of the glass to create that layered signature "sunrise" effect.

Then serve the cocktail immediately, and sit back to admire the beautiful sunrise. -- the Malibu Sunrise cocktail, that is.  Because it's one beautiful, flavorful, and refreshingly fun drink that's super easy to make.

Ingredients:

For Each Cocktail:
  • 4 oz. pineapple juice
  • 1/2 oz. orange juice
  • 2 oz. Malibu coconut rum
  • 1 T. grenadine
  • maraschino cherries, pineapple chunks, and/or orange slices for garnish

Instructions:

  1. Place a few ice cubes in a tall collins-style cocktail glass. Pour in pineapple juice, orange juice, and Malibu coconut rum. Stir until well combined.
  2. Slowly pour grenadine down the side of the glass.  Do NOT stir.
  3. Garnish with maraschino cherries, pineapple chunks, and/or an orange slice, as desired.
  4. Serve immediately.
