Lemon lovers, I have something unfortunate to share ~ my husband detests lemon desserts. Which I completely don't understand. I mean, how can one not like lemon desserts?? It's baffling to me, indeed.
But what it means for me is I can only make lemon desserts when I have someone to share them with. Because seriously, while I'm sure I certainly could eat an entire batch of lemon whatever, it's certainly not something I should do.
So when I had the opportunity to make cupcakes for our daughter's 7th birthday party with our family, not only did I make her much-requested Funfetti Happy Birthday Cupcakes, I also seized the opportunity to whip up a batch of my favorite vanilla cupcakes topped with this super creamy, super tasty Lemon Buttercream Frosting. It's the perfect frosting for lemon lovers.
Modeled after my ultra fluffy, sweet-but-not-too-sweet, loaded with great vanilla flavor homemade vanilla buttercream frosting, this Lemon Buttercream Frosting is loaded with flavor, too. Using a good amount of fresh lemon juice and zest gives this frosting a fantastic lemon punch. All while being not-too-sweet, too.
Because beating well = incorporating air. And air = fluffy texture.

So while my non-lemon-loving husband didn't partake in enjoying these beautiful lemon frosting-topped cupcakes, the lemon lovers of our family sure did! And let me just tell you, these tasty little lemon beauties were gone in a flash.

Lemon Buttercream Frosting
Loaded with fresh lemon juice and zest, this Lemon Buttercream Frosting packs fabulous lemon flavor ~ it's the perfect frosting for lemon lovers.

ingredients:
- 1 ½ c. (3 sticks) unsalted butter
- 3 c. confectioners sugar
- 3 T. fresh lemon juice
- 2 T. lemon zest
- 2 T. milk
- pinch salt
instructions:
How to cook Lemon Buttercream Frosting
- Beat butter in bowl of electric mixer on medium speed until fluffy, about 1 minute.
- Reduce speed to low and add sugar, 1 cup at a time, beating for about 15 seconds between each addition. Increase speed to medium and beat until smooth, about 3 minutes.
- Add lemon juice, lemon zest, milk, and salt, beating on low speed to combine. Increase speed to medium and beat until fluffy, 3-4 minutes, stopping to scrape down sides once or twice.
TRACEY'S NOTES
- Buttercream may be covered and kept at room temperature for several hours or refrigerated in an airtight container for a week. Bring to room temperature before using.
- This recipe frosts one cake or about 18 cupcakes.
