Cracker Toffee -- it's a holiday treat we all know and love. Whether you call it cracker candy, Christmas crack, Saltine toffee, or any of its various other names, we're most certainly all familiar with at least some version of this Christmas-time classic. With its delicious combination of salty-and-sweet, it's simply perfect for Christmas snacking, gift giving, and all those Christmas day cookie trays.
I was first introduced to cracker toffee by my sister-in-law. One of her favorite recipes is a graham cracker pralines version, where the graham crackers are slathered with cracker toffee's signature butter-sugar toffee mixture, and then loaded with pecans and chocolate chips.
Whether you call it cracker candy, Christmas crack, Saltine toffee, or any of its various other names, we're most certainly all familiar with at least some version of this Christmas-time classic.
After trying that very first cracker toffee taste from my sister-in-law, I was hooked. I've since come to know many different versions of the tasty stuff, like Ritz Cracker Candy, German Chocolate Cracker Candy, and even S'mores Pralines, loving each and every one.
My new favorite variation? -- Peppermint Saltine Cracker Toffee, all dressed up with chocolate and candy canes for Christmas!
Lying just under that all-dressed-up chocolate and candy cane layer is the all-important layer of toffee, made extra delicious with a jolt of peppermint mixed in.
What's to Love About This Recipe?
In this peppermint cracker toffee version, the toffee layer is infused with peppermint by melting finely crushed candy canes in with the sugar-and-butter mixture. It's a method that works fabulously to spread great peppermint flavor throughout this classic treat.
Oh, what a tasty treat it is.
How to Make Peppermint Saltine Cracker Toffee:
Creating this Peppermint Saltine Cracker Toffee deliciousness is really quite easy. Simply start by lining a baking pan with a layer of saltine crackers. Then cook up a mixture of brown sugar, butter, and crushed candy canes, pouring that resulting toffee mixture over the saltine crackers. Pop the slathered saltines into the oven and bake briefly until the toffee is bubbly.
Immediately while the brown sugar toffee mixture is still hot, sprinkle chocolate chips all over the top. Let the chocolate chips sit for 5 minutes or so to soften.
Then spread the melted chocolate chips evenly over the crackers. An offset spatula works great for this step.
While the melted chocolate is still warm and soft, sprinkle the chocolate evenly with chopped pecans and some more crushed candy canes.
And then let everything set up until the chocolate is cooled and firm.
I recommend placing the pan in the refrigerator for about 15 to 20 minutes to completely chill everything and harden the chocolate. (And speed the setting process along!).
Once everything's completely cooled, break up the Peppermint Saltine Cracker Toffee into pieces.
