Peanut Butter Granola

Peanut Butter Granola with honey-roasted peanuts ... it's high protein, whole grain, and delicious.


I'm not a picky eater.  Well, except for just a few things.  Like fish.  And black olives.  And caraway seeds.  And peanut butter.

Yes, I'm extremely picky when it comes to peanut butter.  I like it best straight-up on a spoon, just scooped out of the jar.

Just plain, slathered on a piece of bread?  Okay.  On toast or an English muffin? ...

I can handle that.  A Reese's peanut butter cup with chocolate?  Yes ... but only the mini ones that have more chocolate than peanut butter .  The 'big' ones have, well, ... just too much peanut butter stuff.

So, how about a peanut butter and jelly sandwich, you ask?  Absolutely not!  No way, no how.  Can't stand it.  That other childhood classic combination of peanut butter and marshmallow fluff?  Nope.  And don't even get me started on peanut butter and bananas.  Ick.


Until recently, I didn't even like peanut butter in baked goods or desserts.  Can you believe it?  But ... I seem to be getting over that dislike (case in point - Black Bottom Peanut Butter Icebox Pie).  Hmmmm, maybe that's not a good thing.

So when I decided I wanted to try making peanut butter granola, I surprised even myself.



And turns out, it was a really yummy surprise!  I found the original recipe over at Chocolate, Chocolate and More, and then tweaked it quite a bit.  No shocker there, right? ... If you read here often, you pretty much know I can't leave a recipe alone.  I've always got to try a thing or two ... or three ... different.

The biggest tweak I made was to put in honey-roasted peanuts.  Total yum!  Just take a peek at those beautiful granola chunks with tasty honey-roasted peanuts ...


I'm so glad I took the plunge to make this peanut butter granola.  While chai granola is still my all-time favorite, this one is a super close second!

Now, on a totally different note, I'd like to share with you one of the absolute coolest Christmas presents I've ever received.  'Cause I used it as the background for the peanut butter granola photos.

Peanut Butter Granola

Peanut Butter Granola with honey-roasted peanuts ... it's high protein, whole grain, and delicious.

Ingredients:

  • 3 c. old-fashioned oats
  • 3/4 c. creamy peanut butter
  • 3/4 c. honey
  • 1 tsp. vanilla extract
  • 1/4 c. wheat germ
  • 3/4 c. sunflower seeds
  • 1/4 tsp. ground cinnamon
  • 1 c. honey-roasted peanuts

Instructions:

  1. In a large bowl, combine oats, wheat germ, sunflower seeds, and honey-roasted peanuts.
  2. Combine peanut butter and honey in a small bowl and microwave, about 30 seconds, until peanut butter melts. Stir to mix well. Add in ground cinnamon and vanilla extract; stir again.
  3. Pour peanut butter mixture into oat mixture and stir until oats are completely coated with the peanut butter mixture.
  4. Spread granola mixture onto a baking pan lined with parchment paper or aluminum foil. Bake at 300 degrees for 30 to 35 minutes, stirring about every 10 minutes. 
  5. Remove from oven and let cool completely. Store in an airtight container.

  12. It is in the oven now. I added some coconut oil and protein powder, and it tasted delicious. Can't wait to try it when it's done. Thanks for the recipe. I have been buying granola and it is so expensive. Glad to have an alternative.
