Refreshingly tasty Pineapple-Pecan Chicken Salad may just be the perfect chicken salad for summer time. Or any time, for that matter!
Is anyone else already thinking of the sandy beaches and sweet sunshine of summer? I know I sure am. And am counting down the days to our family beach vacation in a few weeks.
I am, though, fully aware it's still a month away until the official start of summer. So what's a ready-for-the-beach wishing-it-was-summer girl to do as she waits for warmer days and sun rays? Do some summer wishin' through her food, of course!
Like by enjoying the refreshingly delicious, scream-of-summer flavors of this Pineapple-Pecan Chicken Salad that I recently whipped up for lunch.
Chicken salad is one of my favorite lunch foods. Since I eat it so often, I mix it up with lots of different variations ... like my favorite Tarragon Chicken Salad, or Traditional Southern Chicken Salad, or even Tzatziki Chicken Salad ... you've gotta change it up, right?
And I totally love this pineapple and pecan variation.
This version has such a nice, refreshing flavor with the sweetness of all the pineapple in it accompanied by the wonderful crunch of pecans. But it's not too sweet, you know what I mean? The pineapple tidbits bring a lightness to the chicken salad ... without being overpoweringly sweet. It's one chicken salad that just begs to be eaten in the heat of summer.
But believe me, while it may be just perfect for summer eating, the wonderful flavors of Pineapple-Pecan Chicken Salad are fabulous to enjoy any time!

Pineapple-Pecan Chicken Salad

ingredients:
- 3 c. chopped cooked chicken breasts
- 1 c. finely chopped celery
- 2 green onions, sliced (about 3 T.)
- 2 T. finely chopped green pepper
- 1 tsp. salt
- dash of black pepper
- 1/2 c. mayonnaise
- 1/2 c. chopped pecans
- 1 (20 oz.) can pineapple tidbits, drained
- 2 T. lemon juice
instructions:
How to cook Pineapple-Pecan Chicken Salad
- Combine chicken, celery, green onion, green pepper, salt, black pepper, and mayonnaise in a bowl; mix well.
- Stir in pecans, pineapple, and lemon juice.
- Chill for about 30 minutes before serving to allow flavors to meld.
