A couple weeks ago, I embarked upon an adventure to make a positive change in my life, going along with Crunchmaster's #NewBeginnings launch of their new logo and packaging.  And let me just tell you, when Crunchmaster challenged me to make a new beginning like they are, it wasn't hard at all to decide what mine would be ~ more wholesome snacking for ME!

See, when it comes to choosing and preparing healthy snacks for our 7-year-old daughter, I do a pretty good job.  But when it comes to me?  Not so much.  It seems that's always the way with us parents, right? ... We take great care of our little ones, without being so diligent for ourselves.

Well after introducing this new adventure in my Creamy Feta Dip post, my quest for healthier snacks continues!  With this super tasty Easy White Bean Salad.

I absolutely crave crunch when I snack.  And unfortunately, crunchy quick-grab snacks aren't always the healthiest, most wholesome of choices.  But with the help of Crunchmaster, I can change that.

For a great afternoon pick-me-up, I love to pair a dish of this Lemony White Bean Salad with Crunchmaster Multi-Seed Original crackers.  But hey, if I'm out of the original, the Sea Salt ones go great, too!

Easy White Bean Salad

Easy White Bean Salad

Serve up this easy White Bean Salad as a side, or pair it with crackers for a a totally tasty dip. It's perfect for healthier snacking and eating!

Ingredients:

  • 1/4 c. fresh lemon juice
  • 1 T. extra-virgin olive oil
  • 2 T. chopped fresh mint
  • 1 clove garlic, finely minced
  • 1/2 tsp. finely grated lemon zest {about ½ a lemon}
  • 1 tsp. granulated sugar
  • 1/4 tsp. pepper
  • 1/8 tsp. salt
  • 1 (15 oz.) can white beans {Canellini or Great Northern beans}, drained & rinsed
  • 1/2 c. finely chopped Vidalia onion {about ½ of a medium-sized onion}
  • 1/3 to ½ c. chopped fresh parsley
  • 1/2 c. chopped red bell pepper OR tomato

Instructions:

Prepare the Dressing:
  1. In a large bowl, whisk together the lemon juice, olive oil, and sugar until the sugar is well blended and dissolved. 
  2. Add the mint, garlic, lemon zest, pepper, and salt; whisk until well combined.
Assemble the Salad:
  1. Add drained & rinsed beans, onion, parsley, and red bell pepper. Toss to combine with the dressing, making sure that all ingredients get coated.
  2. Refrigerate at least one hour {or overnight} to allow the flavors to meld.
  3. Serve as a side salad or with crackers for dipping.
