Chocolate Mint Chip Ice Cream

It finally  feels like Spring here in the South with May fast approaching, and I couldn't be happier.  Yes, May is right around the corner ... can you see it waving it's little hand to say "hi?"  And with May in the South comes three things ~ warmer weather, Mother's Day, and wedding season!  Okay, okay ... so all those three things come with May just about everywhere, not just in the South.

Well, I don't know about you, but warmer weather makes me think ice cream.

And on the ice cream front, I'm happy to share with you one of the best ice creams I've tasted in a long time.  No joke.

This quick-to-whip-up, no-machine-needed Chocolate Mint Chip Ice Cream is absolutely amazing.  And it takes only four ingredients to make it!  Yup, that's it.  Four.  If you've got some whipping cream, sweetened condensed milk, chocolate syrup, and Andes Mints ... you've got this ice cream.

I love how the ice cream is loaded with bits of Andes Mints ...

...  infusing it with wonderful mint flavor through and through.

See all those chopped up Andes Mints bits?  Oh, yeahhhhh, they all went in that ice cream, baby.
