Typically when you see a recipe for poppy seed bread, it's lemon flavored. But oh, how we love this version of poppy seed bread without lemon! This moist and flavorful Glazed Poppy Seed Bread gets it's fabulous flavor from a combination of vanilla, almond, and butter extracts instead. 

And man, the combination of these three extracts is sooo good. So good in fact, Glazed Poppy Seed Bread is my absolute favorite quick bread of all time.

The loaf itself bakes up super tender and moist with a really nice crumb. It then gets an extra jolt of moistness from a citrus-sugar glaze made with freshly-squeezed orange juice. The glaze sinks into the top of the bread, making the top extra tender and extra flavorful. -- That glazed top is amazingly delicious, for sure. 

In addition to its fabulous flavor, we love that this Glazed Poppy Seed Bread recipe makes two loaves. -- Because when we whip up a batch, it's gone in no time flat. Sure, you can absolutely pop that second loaf in the freezer for later. Glazed Poppy Seed Bread Ingredients:

There are two components involved in making Glazed Poppy Seed Bread -- 1. the bread itself, and 2. the extra-tasty glaze.

In addition to basic pantry staples, to whip up the bread, you'll need:

  • Vanilla extract - One of the three extracts that combine to create this bread's amazing flavor. Choose 100% pure vanilla extract, rather than imitation, for the best flavor and result.

  • Almond extract - Brings sweetness and a wonderfully distinct flavor to the bread.

  • Butter extract - Also sometimes sold as "butter flavoring," butter extract brings a beautiful richness of flavor to the finished bread.

  • Poppy seeds - The signature ingredient of poppy seed bread, poppy seeds create the bread's characteristic speckled look and bring a bit of nutty flavor to each bite.

For the glaze, you'll need:

  • Freshly-squeezed orange juice - The juice of about 1 orange is needed for this recipe. We do recommend using freshly-squeezed orange juice, rather than bottled, for the best flavor result.

  • Granulated sugar - Brings sweetness to the glaze, and when combined with the liquid of the orange juice, creates a really nice and tasty sugary crust on the top of the bread.

  • Canola oil - Just a small touch of oil helps create a good consistency for drizzling, and gives the glaze a nice sheen on the bread.

  • Vanilla extract & almond extracts - Including these in the glaze nicely echoes the flavors in the bread loaf itself.

How to Make Glazed Poppy Seed Bread:

The batter for Glazed Poppy Seed Bread is a truly simply one to make. It's one of those dump-and-mix batters where you just put all the ingredients in a mixing bowl, and blend them with an electric mixer until they're well combined. Easy, right?

Once the batter is mixed, spoon it into two greased loaf pans, dividing the batter evenly between the pans. Then pop the pans in the oven and bake the bread for about an hour until a cake tester inserted in the center comes out clean.

While the bread bakes, combine all the glaze ingredients in a small saucepan and heat them over medium heat until the sugar melts.

After the bread is baked, let it cool in the pans for 5 minutes. Then remove both loaves from the pans and place them on a cooling rack. Immediately prick the tops with a fork, and spoon the warm glaze over the top of each loaf.

Let the bread cool completely, and then you're ready to slice it up. -- Revealing its beautifully poppy seed-speckled inside.

Ingredients

Bread:
Glaze:
  • 1/4 c. freshly squeezed orange juice (about 1 orange)
  • 3/4 c. granulated sugar
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. almond extract
  • 1/2 tsp. canola oil

Instructions

Prepare the bread:
  1. Place all bread ingredients in a large mixing bowl. Blend with an electric mixer until well mixed, about 2 minutes.
  2. Spoon batter into two greased loaf pans, dividing the batter evenly between the pans.
  3. Bake at 325 degrees until a cake tester inserted in the center comes out clean, about 1 hour.
Prepare the glaze:
  1. While the bread is baking, prepare the glaze. Combine all glaze ingredients in a small saucepan; heat over medium heat, stirring frequently, until sugar melts.
  2. When done, remove bread from the oven and cool in the pan for 5 minutes. Remove from the pan and place on a cooling rack.
  3. Immediately prick the tops of the breads with a fork, and spoon the warm glaze over the top of each loaf.
  4. Let cool completely.
