All it takes to whip up this fluffy Lemon Mousse is:
1. Whipping cream
2. Sugar, and
3. Lemon curd
With the whipping cream and sugar, you mix up some homemade whipped cream to serve as the foundation of the mousse. Then, you simply stir in a little lemon curd.
That's it. Easy as can be!
Sometimes I make my own lemon curd, and sometimes I buy it. It just depends on how much time I have. If I've got a little available time floating around? ... I make my own. If I want to whip up this 3-ingredient Lemon Mousse recipe extra fast? ... I grab a jar from the store.
Once prepared, spoon the Lemon Mousse mixture into individual serving dishes. Top the servings with raspberries, a shortbread cookie, and perhaps a little dollop of more lemon curd if you'd like ... and then get ready to enjoy fluffy lemony goodness.

ingredients:
- 1 c. whipping cream or heavy cream
- 1/4 c. granulated sugar
- 1 c. lemon curd {homemade lemon curd or store bought}
- raspberries & shortbread cookies, for garnish {optional}

How to make Easy 3-Ingredient Lemon Mousse
- Chill a large mixing bowl and the beaters of an electric mixer (or whisk attachment of a stand mixer) in the refrigerator for about 15 minutes. Remove from the refrigerator and pour the whipping cream into the chilled bowl. Beat on high speed for one minute. Add sugar and continue to beat on high speed until soft peaks form.
- Gently fold in lemon curd, 1/3 cup at a time, until well blended.
- Spoon into individual serving dishes.
- If desired, top each serving with raspberries and a shortbread cookie. For extra lemon punch, drop a small dollop of lemon curd on top, too.

- Alternative Cool Whip method: Combine 1 1/2 cups Cool Whip non-dairy whipped topping and 1/2 cup lemon curd; stir until well blended.
