Christmas White Chocolate-Peppermint Popcorn




I've been a bit obsessed with peppermint over the past couple of weeks.  I'm really not sure why, but I've been drawn to recipes with peppermint this Christmas season.  So imagine my disappointment when today I tried out four new recipes with peppermint ... four ... and wasn't happy with a single one of them.  Not a one.

Major bummer-in-the-kitchen day.

But I do like this Christmas White Chocolate-Peppermint Popcorn!  And the funny thing is, I didn't even mean to make it! ...


Nope.  This peppermint-laced popcorn wasn't in my peppermint-obsession line-up.


I was actually whipping up a batch of my White Chocolate Popcorn for the Cookies for Kids' Cancer bake sale I participated in last weekend when I thought to myself ... hmmmm .... I wonder what this would taste like with candy canes in it?

See.  I told you I've been obsessed with peppermint.

So I went to my pantry, grabbed a candy cane (because I have them in my pantry because I've been obsessed with peppermint), broke off a tiny piece, and popped it in my mouth with a small handful of the white chocolate popcorn I was making.

And it was good.  Like really good.

And I was surprised.  I didn't actually expect it to be good.

Oh, but it is.  And so this Christmas White Chocolate-Peppermint Popcorn came to be.

See those teeny tiny flecks of finely crushed candy cane clinging to the popcorn?


Well, those teeny tiny flecks of candy cane give a really refreshing pepperminty-ness to the popcorn.  Just a hint of peppermint ... with a hint of chocolate from M&Ms ... and the saltiness of popcorn.  It's yum.

I'm so glad this creation-of-my-random-thoughts concoction worked.  'Cause, out of my peppermint obsession trials, none of the others have!  Sometimes it pays to be random.

Christmas White Chocolate-Peppermint Popcorn

Ingredients
2 bags microwave popcorn, popped
1 (24 oz.) package white bark coating
2 T. shortening
3/4 to 1 c. red and green M&Ms
1/4 c. finely crushed candy canes (approximately 10 mini candy canes)

Directions
1.  Place popped popcorn in a large bowl.  

2.  Melt bark coating and shortening together in the microwave per package directions (typically in 30 second intervals, stirring in between).  Pour melted coating over popcorn; gently toss with a large spatula to coat popcorn.

3.  Sprinkle M&Ms and finely crushed candy canes on top and gently toss again.  Spread out on waxed paper to set.

Can be stored in an airtight container at room temperature for several days.

  3. Did you know that Target (and only at Target) they have white chocolate peppermint M & M's. I bet that would be good with the popcorn also.
