It's back-to-school time!

For many of us, that also means getting back to setting morning alarms, actually getting up to those alarms, and packing lunches.

I must admit, packing lunches is one of my least favorite things to do.  It seems I easily get in lunch-packing ruts, putting in the same thing over and over and over again.

Whether you pack school lunches, work lunches, or eat lunch in the comfort of your own home, classic Tarragon Chicken Salad is a great lunch option.

And I always start out the school year strong with preparing and packing as much of the lunches as possible the night before.  But the later and later it gets into the year, the more and more morning scrambling there seems to be to get that lunch together and just get out the door.

Can anyone relate?  Because for me, the lunch struggle is oh-so-real.

So in honor of back-to-school time, I decided to share one of my favorite pack-your-lunch items - my Mom's Tarragon Chicken Salad.  I eat this a lot.  I mean really a lot.

And whether you pack school lunches, work lunches, or eat lunch in the comfort of your own home, classic Tarragon Chicken Salad is a great lunch option.

This classic chicken salad gets big flavor from tarragon, dried cranberries, and chopped pecans.  Pecans and celery bring nice crunch, dried cranberries bring sweetness, and dried tarragon gives fabulous flavor to every bite.

It's perfect served over greens or loaded into croissants or bread slices to make the best chicken salad sandwiches.  Both ways are perfectly packable to pop in those lunch bags!

It's a tasty way to help break out of the lunch rut, for sure.

Yield: about 4 cups

Tarragon Chicken Salad

Enjoy classic Tarragon Chicken Salad, loaded with big flavor from dried tarragon, dried cranberries, and chopped pecans. Perfect served over greens or in {the best} chicken salad sandwiches.

ingredients:

  • 4 chicken breasts, or a small whole chicken {about 3 1/2 c. chopped cooked chicken}
  • 2 stalks celery, chopped
  • 1/2 c. dried cranberries or halved grapes
  • 1/2 c. chopped pecans
  • 1 T. dried tarragon
  • 1 tsp. salt
  • 1/8 tsp. black pepper
  • 1/2 c. mayonnaise

instructions:

How to cook Tarragon Chicken Salad

  1. Cook chicken and remove meat from the bone (if necessary); chop into small pieces.
  2. Combine chicken with remaining ingredients. Adjust salt and pepper to taste, and add more mayonnaise as needed to reach desired consistency.
  3. Chill for at least 2 hours to allow flavors to meld.
  4. Serve with greens or in sandwiches.

    This is my first time to visit your blog and I printed 2 of your recipes. I love Shrimp salad
    and Tarragon Chicken salad. I make my own shrimp salad and the only Tarragon chicken salad
    I have had is from our local grocery store and it is fabulous but I bet this home made addition is even better. Can't wait to try these recipes...thanks for sharing them,
