Do you ever get in a rut with your dinners?  I know I sure do ... making the same thing over, and over, and over again.  While I swear my husband could be perfectly happy eating the same thing every night, I know I certainly could not.

No.  I need to mix it up when it comes to my dinnertime.  But even still ... there are times when I find myself going to the same four or five dishes on an all-to-regular basis.  My meal-planning brain just seems to get stuck on 'repeat!'

Do you want to know what usually happens when I finally reach my breaking point and just can't take it anymore with my regular dinner go-to's?  When I absolutely have  to break free of the 'repeat' dinner cycle?

Now, with these "Porkinator" Marinated Pork Loaded Baked Potatoes, I didn't choose to serve our Smithfield® Marinated Pork with  a side dish.  No ... I chose to serve our pork on  our side dish.  Based on Smithfield®'s Porkinator Sandwich recipe, I took all the fabulous sandwich's filling ingredients and loaded them into a freshly-baked potato.

The result?  Oh man, these "Porkinator" Loaded Baked Potatoes are good.  Like, "I'm-soooo-glad-to-be-rescued-from-my-dinner-rut" good.

Building these loaded potatoes is really quite easy.  Start by loading onto each baked potato some baby spinach leaves, roasted Smithfield® Peppercorn & Garlic Marinated Pork Tenderloin, and onions {that get baked right along with the pork ... so no extra pan to deal with}.

Top with shredded cheddar cheese and crumbled crisp-cooked bacon.

Then place the loaded potatoes back in the hot oven for about 2 or 3 minutes until the cheese gets all melty.

Finally, drizzle the "Porkinator" Loaded Baked Potatoes with a quick-and-easy sauce that completely puts them over the top ... Ranch-Barbecue sauce.  Who knew simply stirring together Ranch dressing and barbecue sauce would be so delicious?  The way the flavors of the Ranch-Barbecue sauce, melty cheese, bacon, and peppercorn-garlic pork come together is nothing short of amazing.

"Porkinator" Marinated Pork Loaded Baked Potatoes
Source:  Adapted from Smithfield®'s Porkinator Sandwich

Ingredients
  • 1 package Smithfield® Peppercorn & Garlic Marinated Pork Tenderloin
  • 4 to 6 large baking potatoes, baked
  • 1 medium-sized yellow onion, thinly sliced
  • 1 T. extra-virgin olive oil
  • 1/2 c. Ranch dressing
  • 3 T. barbecue sauce
  • baby spinach leaves
  • about 3/4 c. shredded sharp cheddar cheese
  • 4 to 6 slices bacon, cooked crisp & crumbled
Directions
  1. Place pork tenderloin on rack in shallow roasting pan. Toss onions with olive oil and a pinch of salt and pepper; place on a piece of aluminum foil and fold foil around onions to form a pouch. Place pork and onions in preheated 425 degree oven. Roast about 30 minutes until internal temperature of pork reaches 150°F. Remove pork from oven and let stand 10 minutes before slicing very thin.  Allow onions to continue to cook while pork rests.
  2. While pork and onions bake, mix together Ranch dressing and barbecue sauce; set aside.
  3. Once pork is sliced, remove onions from oven. Cut each potato open. Drizzle each with about a tablespoon of barbecue sauce mixture and sprinkle with a bit of cheese; top with a few spinach leaves, pork slices, onions, more cheese, and bacon. Place back in oven for 2 - 3 minutes until cheese melts. Drizzle with a bit more sauce and serve.
