And would you like to know what's interesting about this particular Krispie treats recipe?  Unlike the classic original and most other versions, they're made without marshmallows.

With most Krispie treats recipes, you melt marshmallows and butter together to make the treats' characteristic sticky coating of deliciousness.  But not so with this recipe.

Loaded with creamy peanut butter, mini chocolate chips, and lots of fabulous flavor, they're a totally tasty take on the classic that any peanut butter-chocolate fan will love.

In this peanut butter Krispie treats recipe, the marshmallows are replaced with a combination of corn syrup, brown sugar, and peanut butter.  And I must say, it's a super tasty replacement, indeed.

When we made the pan in these photos, my 10-year-old daughter and I had gotten a craving for Rice Krispies Treats and decided we'd whip up a quick batch.  When we went to the pantry to grab out the ingredients, we realized we were out of marshmallows.  It happens, right?

Luckily, we remembered this no-marshmallow Krispie treats recipe.  I quickly reached for one of our (many) recipe folders, hoped we had remembered correctly which one it was in, and began digging through to locate the recipe we needed to save the Krispie treats day.

With happy smiles and found-recipe in hand, we whipped up a batch of these marshmallow-less peanut butter beauties.  And more than satisfied that Krispies treats craving!

Just like original classic Rice Krispies treats, this peanut butter version is really easy to make.

Start by combining some corn syrup, granulated sugar, and brown sugar in a large saucepan.  Heat this mixture to a boil, and immediately remove it from heat.  Then stir in a good heaping dose of creamy peanut butter.

Add in Rice Krispies cereal and gently stir everything together until the cereal gets all coated with the gooey peanut butter yumminess.  

Then stir in some mini chocolate chips.  Some of the chocolate chips will melt since the peanut butter mixture is still warm at this point, but that's totally okay.


If you compact the mixture too much and pack it together, the Krispies treats will turn out dense and hard.

Spoon the Krispies mixture into a 9x13-inch baking dish.  And then use your hands to press the mixture down lightly and spread it into an even layer that fills the baking dish.

Once the Krispies mixture is in the pan, sprinkle some more mini chocolate chips on top to finish the treats off.

Set them aside to cool completely, and then you're ready to cut them into squares and enjoy their peanut butter-chocolate deliciousness.

I've got three quick tips to help make this easy recipe even easier and give great results:

1. Line the baking dish with foil and spray foil with non-stick cooking spray before putting in the Rice Krispies mixture.  This makes it easier to remove the finished treats from the pan.  (I don't always do this -- as you'll notice in the photos of this post.)

2. Spray your hands with non-stick cooking spray before pressing and spreading the Rice Krispies mixture into the baking sheet.  This makes spreading easier and helps keep the mixture from sticking to your hands as much.  (I always do this.)

3. Be sure to just lightly and gently press the Rice Krispies mixture to spread it. If you compact the mixture too much and pack it together, the Krispies treats will turn out dense and hard.

Ingredients:

  • 1 c. light corn syrup
  • 1/4 c. granulated sugar
  • 1/4 c. brown sugar
  • 1 c. smooth peanut butter
  • 6 c. Rice Krispies cereal
  • 3/4 c. mini chocolate chips, divided

Instructions:

  1. Line a 9x13-inch baking dish with foil and spray foil with non-stick cooking spray.  Set aside.
  2. Combine corn syrup, granulated sugar, and brown sugar in a large saucepan.  Heat to a boil over medium-low heat.  Once mixture boils, immediately remove from heat.
  3. Stir in peanut butter until well mixed.
  4. Add Rice Krispies cereal; stir gently until cereal is coated with peanut butter mixture.
  5. Stir in 1/2 cup of the mini chocolate chips.
  6. Spoon mixture into prepared baking dish.  Use your hands to press the mixture down lightly and spread it into an even layer that fills the baking dish.
  7. Sprinkle remaining 1/4 cup mini chocolate chips evenly on top. 
  8. Allow to cool completely, then cut into squares.  Store at room temperature.
TRACEY'S NOTES:
  1. Spray your hands with non-stick cooking spray before pressing and spreading the Rice Krispies mixture in the baking sheet.  This will make spreading easier and help keep the mixture from sticking to your hands as much.
  2. Be sure to just lightly and gently press the Rice Krispies mixture to spread it, being careful to not compact and pack it together too much.  If you compact it too much, the Krispies treats will be dense and hard.
