What's better than a delicious chocolate cake?  A delicious chocolate cake amped up with Cheerwine, made for you by a fabulous friend.

I was first introduced to this tasty Cheerwine Chocolate Cake several years ago by my sweet friend Jenny.  On my birthday she surprised me by showing up with a pan full of this cake, all ready for me to dig into ... along with a beautiful handwritten copy of the recipe, too.

Tender chocolate cake loaded with a sweet hint of cherry-almond, Cheerwine Chocolate Cake's been a favorite of mine ever since.

But what exactly is Cheerwine, you ask?

Tender chocolate cake loaded with a sweet hint of cherry-almond flavor, Cheerwine Chocolate Cake's been a favorite of mine ever since.

If you're not familiar with it (and if you're not from the South, there's a good chance you're not!), Cheerwine is a classic Southern cherry-flavored soda made in North Carolina.  It's reminiscent of Dr. Pepper, but with a more pronounced cherry flavor and deeper burgundy color.

Contrary to its name, Cheerwine is non-alcoholic.  It's indeed a soft drink that has absolutely zero to do with wine.

And let me just say, when you combine Cheerwine with chocolate in cake form, the result is amazingly tasty.

As an added bonus to its fun flavor, Cheerwine Chocolate Cake is super easy to make.

The cake itself starts with boxed Devil's Food cake mix.  Cheerwine and almond extract are added to give the cake its characteristic cherry-almond flavor.

Simply prepare the cake batter according to the cake mix directions, except add in a teaspoon of almond extract and replace the water called for on the cake mix package with Cheerwine instead.

Then bake the cake up in a 9x13-inch pan to make a sheet cake.

Once the cake has cooled, make a simple Cheerwine-laced chocolate boiled icing to pour on top of the cake.

In a saucepan, combine butter, powdered sugar, cocoa, almond extract, and more Cheerwine ...

Cheerwine Chocolate Cake Icing Ingredients

Bring the mixture to a boil over medium to medium-high heat, and boil it for about one minute.  Stir it constantly to make sure it doesn't burn or stick to the bottom of the pan.

Remove the icing from the heat and let it cool in the pan for 25 minutes so it's not piping hot and thickens up just a little bit.

Once the cake has cooled, make a simple Cheerwine-laced chocolate boiled icing to pour on top of the cake.

Then, pour the warm icing all over the top of the cake.

If needed, gently spread the icing with an offset spatula to completely cover the top of the cake.  Do this quickly, though, because the icing cools and begins to set really quickly.  Once it starts to set, the icing will get crackly and kind of "ugly" looking if you mess with it.

Finish off the cake with a sprinkling of chopped pecans.

The chopped pecans are optional and can certainly be left off if you're not a fan of nuts.  But they do add a nice look and a little bite of texture to the finished cake.

  2. This is SUPER yummy! I had to modify it for my daughter who breaks out in hives when she eats gluten, and it worked BEAUTIFULLY with a GF chocolate cake mix! I also opted for vanilla instead of almond extract because I'm a weirdo who doesn't really love the almond flavor. I live in NC and this is one of my favorite beverages! This is now my FAVORITE chocolate cake!

  3. I am so glad to find this recipe. I am from the Charlotte, NC region, and many years ago I had a cookbook by Barbara McKay from WBTV-Channel 3. She had a recipe like this in her book. I misplaced my cookbook and couldn't remember exactly what went into her recipe and what proportions. I think this one is really close, if not identical. So glad to have found this, as I've been wanting to make this cake for a while. The Cheerwine, almond and chocolate are delightful together. Thanks so much for sharing. Now I can bake another one of these cakes!!
