Creamy-and-comforting potato salad just can't be beat. -- Whether it's a classic potato salad like mom always makes, vinegar-based German potato salad, or a unique version like this tangy Bacon & Blue Cheese Potato Salad.

The combination of bacon & blue cheese certainly brings a tasty twist to potato salad. And this one's made extra tasty with a double dose of blue cheese from both Chunky Blue Cheese Dressing and blue cheese crumbles. The addition of crisp crumbled bacon pairs beautifully with that blue cheese and the salad's creamy potato base.

This Bacon & Blue Cheese Potato Salad was actually inspired by one of my favorite burgers - the classic bacon and blue. Topped with bacon slices and melty blue cheese, a bacon and blue burger is something special. -- And something the blue cheese lover just can't resist. Which got me to thinking, why not put this tasty bacon and blue combination in a potato salad?

And I'm very happy to say that bacon and blue cheese work equally as well together in potato salad as they do on top of a juicy burger. So when you're looking for a backyard get-together salad that's just a little bit different, reach for the bacon and blue cheese to bring a tangy, tasty twist to your potato salad.

Bacon & Blue Cheese Potato Salad Ingredients:

It takes just 5 ingredients (+ some salt and pepper) to prepare this tasty Bacon & Blue Cheese Potato Salad. To whip up a bowlful, you'll need:

  • Russet potatoes - Russet potatoes have a soft, crumbly, flaky texture when boiled due to their higher starch level, which creates a creamier-textured potato salad. We like that creamier texture with the bacon and blue cheese of this potato salad. If you prefer a firmer-textured potato in your potato salad, substitute Yukon Gold potatoes instead.

  • Chunky Blue Cheese Dressing - Replaces traditional mayonnaise as the dressing and binding component of the potato salad, and creates a "base" of blue cheese flavor throughout the salad. We use Wish-Bone or KRAFT brand Chunky Blue Cheese Dressing.

  • Blue cheese crumbles - Amps up the blue cheese flavor of the salad. Use pre-crumbled blue cheese, or purchase a wedge and crumble it yourself.

  • Bacon - Crisp-cooked crumbled bacon brings the flavorful bacon element of the salad. We recommend your favorite hickory smoked bacon for great flavor.

  • Green onions - Chopped green onions bring a subtle touch of onion to the salad, amping up the salad's flavor without being overpowering.

  • Salt & pepper - Seasons the potatoes and salad. Sprinkle the salt and pepper directly on the chopped potatoes before adding any other salad ingredients to best amp up the potatoes' flavor.

How to Make Bacon & Blue Cheese Potato Salad:

To get a bowlful of Bacon & Blue Cheese Potato Salad going, start by boiling some Russet potatoes.

To boil them, scrub the whole unpeeled potatoes and place them in a large pot. Fill the pot with water to cover potatoes by about 1/2-inch and bring everything to a boil. Reduce the heat and allow potatoes to simmer for about 20-25 minutes until they're tender. You can use a fork to test the doneness of the potatoes. -- When tender, a fork should easily pierce into the center of the potatoes.

Drain the potatoes and rinse them with cold water to cool. When cool enough to handle, peel and chop the potatoes into chunks. Place the chopped potatoes in a large bowl, sprinkle them with salt and pepper, and toss gently to season.

Add blue cheese crumbles, crumbled bacon, and sliced green onions to the bowl, and toss gently and combined. Add blue cheese dressing and again toss gently until the potatoes are evenly coated with the dressing.

Cover the potato salad and pop it in the refrigerator for at least one hour to allow the flavors to meld.

Ingredients

  • 3 lb. Russet potatoes
  • 1 to 1 1/4 c. Chunky Blue Cheese Dressing
  • 8 slices bacon, cooked and crumbled
  • 1/2 c. blue cheese crumbles
  • 2 green onions, chopped
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Instructions
