Easy Thai Coconut Curry Spaghetti Squash with Chicken

A couple weeks back, I shared easy Pasta Jambalaya made with Imagine® Louisiana Creole Culinary Simmer Sauce.  Well, I'm so glad I got the opportunity to create with another flavor of  Imagine's® fabulous sauces!
I tend to shy away from making Thai-inspired dishes.  For some reason, I always think they're complicated to make ... or that I'll have to run to the store for a bunch of ingredients I don't keep on hand, tending to by-pass Thai dishes for ones that seem ... well ... less complex to me.

And when I can have a really tasty dish on the table that's easy, quick, and convenient, I'm an extra happy girl.

I whipped up Thai Coconut Curry Spaghetti Squash with Chicken in four simple steps ...  1.  Cooked up my spaghetti squash ... in the microwave, so it went quickly ...  2.  Seared some chicken and mushrooms in a skillet ... 3.  Added Imagine's® simmer sauce, and ... 4.  Stirred in my cooked spaghetti squash strands.

As I found out, not with the help of Imagine's® Thai Coconut Curry Culinary Simmer Sauce!  Nope.  With Imagine's® help, Thai is easy.  Give it a try and you'll surely see.

Thai Coconut Curry Spaghetti Squash with Chicken
  • 1 (10 oz.) packet Imagine® Thai Coconut Curry Culinary Simmer Sauce
  • 4 c. spaghetti squash pulp {1 small spaghetti squash}
  • 1 lb. boneless skinless chicken breast, cut into bite-sized pieces
  • 4 oz. mushrooms, sliced
  • 1/4 c. chopped fresh cilantro
  • 1 T. extra virgin olive oil
  1. Cut squash in half lengthwise and place, cut side down, in a microwave-safe baking dish. Add water to the baking dish to come up about 1/2-inch on the side of the dish. Cover loosely with plastic wrap. Microwave for approximately 10 to 15 minutes until squash is tender and easily pierced with a paring knife. Uncover and allow to cool slightly. Use the tines of a fork to gently pull the flesh of the squash into strands. Set aside.
  2. Heat oil in a skillet over medium-high heat. Add chicken and cook, stirring frequently, until lightly browned, approximately 3 to 4 minutes. Add mushrooms; cook about 2 to 3 minutes until mushrooms soften.
  3. Reduce heat to medium. Pour in Culinary Simmer Sauce and stir gently. Simmer about 3 minutes.
  4. Add spaghetti squash and cilantro; stir gently to coat with sauce.
NOTE ~ Spaghetti squash can be baked in the oven.  Place in a baking dish, as directed in step 1 above.  Cover with foil. Bake at 375 degrees for about 45 minutes, until squash is easily pierced with a paring knife. Turn squash over, re-cover with foil, and continue to bake about another 15 minutes until very tender.
