Coconut-Key Lime Pie Ice Cream Cups

As the song says ... you put the lime in the coconut!  Then add an easy crumb crust and a little freezer time, and you've got tasty Coconut-Key Lime Pie Ice Cream Cups.

Today I'm happy to bring you Coconut-Key Lime Pie Ice Cream Cups, crazily enough, inspired by a song.

So, can you guess which song inspired this yummy-for-the-tummy ice cream creation?

It's this happy little ditty ... "Put the Lime in the Coconut" by Harry Nilsson.  Such a fun little song!

When I was coming up with my coconut ice cream creations {3-Ingredient Coconut Ice Cream, Coconut-Almond Fudge Ripple Ice Cream, and Coconut Caramel Swirl Ice Cream} earlier this week, Harry Nilsson's song just kept running through my head ... I mean, I couldn't get it out.  Not that I minded, 'cause I like the song and all.

"You put the lime in the coconut, you drink the bowl up ... You put the lime in the coconut ... "  Over and over.  And over.  And over.  In my head.

So you know what I did?

I put the lime in the coconut!

Of course I did.

I whipped up a batch of easy 3-Ingredient Coconut Ice Cream and added a touch of lime zest.  The result?  Oh.  My.  Yum.  The lime adds a totally refreshingly yummy zing to the coconut ice cream.  So good.

But then I decided I wanted to turn this ice cream into a key lime pie kinda treat.  Don't get me wrong ... the Coconut-Key Lime Ice Cream is totally tasty all on it's own ... but I wanted to create a more-than-a-scoop-of-ice-cream treat.

You know those little single-serve cups of ice cream you can get?  They've got that little lid you pull off, and then you can dive into your own personal bit of ice cream yumminess?  Well, I decided I could create our own personal bit of Coconut-Key Lime Pie ice cream yumminess!

So as the song says ... you put the lime in the coconut.  Then add an easy graham cracker crumb crust and a little freezer time, and you've got yourself your own personal bit of Coconut-Key Lime Pie Ice Cream ... in a cup.

Coconut-Key Lime Pie Ice Cream Cups

For the crust:
  • 1 1/2 c. graham cracker crumbs
  • 4 T. butter, melted
  • 1/4 c. sweetened flaked coconut
For the coconut-key lime ice cream:
  • 2 c. (16 oz.) whipping cream or heavy cream
  • 1 1/2 c. (12 oz.) cream of coconut*
  • 1 c. sweetened flaked coconut
  • 2 T. finely chopped key lime zest (or regular lime zest)
  1. Combine graham cracker crumbs, melted butter, and 1/4 cup sweetened coconut. Press about 1 tablespoon of the mixture into the bottom of each of 12 paper-lined muffins cups. Set aside.
  2. Chill a large mixing bowl and the beaters of an electric mixer (or whisk attachment of a stand mixer) in the refrigerator for about 15 minutes. Remove from the refrigerator and pour the whipping cream into the chilled bowl. Beat on high speed until medium-to-stiff peaks form. Gently stir in the cream of coconut, sweetened coconut, and lime zest.
  3. Spoon the cream mixture into the prepared muffin cups, dividing evenly. Cover and freeze for about 4 hours or overnight. Garnish with small slices of lime, if desired.
*The stuff you find in the drink mixer section of the grocery store, not coconut milk.
