Personally my favorite way to enjoy leftover turkey is in a good old classic turkey sandwich -- on white bread, slathered with mayonnaise, and complete with a slice of leftover dressing on top. But you know, a girl can only eat just so many turkey sandwiches.

I know many of us turn to turkey noodle soup. But sometimes, we want something a little "more" than a basic turkey soup. And a perfect go-to is this Creamy Turkey Soup with Spinach.

This is one hearty soup, loaded with noodles, a generous amount of turkey, chopped spinach, and rich creamy broth. Not to mention, it's loaded with flavor, too.  

The texture is like a thick, creamy chowder. But if you want it not as thick, just use a little more chicken broth or reduce the amount of flour that's used as the thickener a tad. Either way, Creamy Turkey Soup with Spinach is simply delicious!

  • Turkey - Leftover Thanksgiving (or Christmas) turkey is perfect for this hearty soup. You'll need 3 cups of coarsely chopped turkey. White meat, dark meat, or a mix of both all work fine.

  • "Flavor foundation" vegetables - Onion, garlic, celery, and carrot serve to create a flavorful foundation for the soup.

  • Chicken broth - The main liquid component of the soup. Use canned or homemade, whichever you prefer. If you have turkey stock made from that Thanksgiving turkey, that works great, too.

  • Milk - Creates the soup's creamy chowder-like texture. Whole milk works best, but 2% milk will work if it's what you've got on hand.

  • All-purpose flour - Combined with the milk, all-purpose flour serves as the soup's thickener, helping create its wonderfully creamy texture.

  • Egg noodles - Adds to the heartiness of the finished soup.

  • Spinach - A 10-ounce package of frozen spinach adds great flavor and color to the soup. If you prefer to use fresh spinach, substitute about 1 pound of fresh for the 10 ounces of frozen. Saute or wilt the fresh spinach in a saucepan before adding it to the soup pot to prevent it from releasing a lot of water into the soup.

How to Make Creamy Turkey Soup with Spinach:

To make this Creamy Turkey Soup with Spinach, start by sauteing some carrots, celery, onion, and garlic until they're tender. Then simmer the sauteed vegetables together with chicken broth to make a flavorful base broth for the soup.  

Once the broth base is ready, add in some egg noodles and simmer them until the noodles are cooked al-dente.

Add in chopped cooked turkey and chopped spinach to finish off this rich, hearty, flavor-loaded soup.

Then, you'll add in the creaminess. -- To create the soup's creamy chowder-like texture, simply shake some milk and all-purpose flour together in a jar and pour it into the broth base. Once this is simmered for a few minutes, the flour mixture will nicely thicken up the soup.

Finally, add in chopped cooked turkey and chopped spinach to finish off this rich, hearty, flavor-loaded soup, cooking until they're heated through.

Creamy Turkey Soup with Spinach

ingredients:

  • 3 T. butter
  • 1 c. chopped carrots (about 2 carrots)
  • 1 c. chopped celery (about 2 to 3 stalks)
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 5 c. (40 oz.) chicken broth
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 c. uncooked egg noodles
  • 2 c. whole milk
  • 1/4 c. all-purpose flour
  • 3 c. chopped cooked turkey
  • additional 1 c. whole milk
  • 1 (10 oz.) package frozen chopped spinach, thawed & well-drained
  • additional 1/8 to 1/2 tsp. salt

How to cook Creamy Turkey Soup with Spinach

  1. In a large saucepan or Dutch oven, melt butter. Add carrots, celery, onion, and garlic; cook until tender, about 5-7 minutes.
  2. Add chicken broth, ½ teaspoon salt, and 1/8 teaspoon pepper. Bring to a boil; reduce heat and simmer, uncovered, for 15 minutes.
  3. Increase heat to return broth mixture to a slow boil. Add egg noodles; reduce heat to medium and simmer until noodles are al dente, about 5-7 minutes.
  4. Combine 2 cups milk and flour in a large screw-top jar. Cover and shake well until smooth. Stir into soup. Increase heat back to medium-high; cook and stir until thickened and bubbly, about 8 minutes. Reduce heat to medium.
  5. Stir in turkey, additional 1 cup milk, and spinach. Cook and stir over medium heat about 5 minutes more until the soup is heated through. Be careful not to let the soup scorch.
  6. Taste the soup, and add 1/8 teaspoon to up to ½ teaspoon more salt as needed. This additional salt added at the end of the cooking time really brightens up the flavors in this hearty soup.

  6. I was thinking fresh spinach could be used instead of frozen. Probably add it when adding the noodles? Or maybe saute it with the veggies. What do you think?
