As a new foster/adoptive Mom, this is my first Halloween with a kid.  And let me tell you, our very spirited, highly-active little 6-year-old girl is very  excited for Halloween!  Which means this new Mom is having to get into the full Halloween swing, too.

And believe me, with a busy school and after-school-activities schedule {like we all seem to have, right?}, I'm definitely on the search for ways to make Halloween easy ... all without costing me an arm and leg.  I'm happy to say these easy Candy Corn Slab Cookies sure fit that bill.

So the other day, Little Miss H. and I took a quick trip to Walmart to pick up some candy corn for a batch of these cookie treats, and to start getting ourselves into full Halloween spirit mode.  First she picked out a trick-or-treat bucket in her absolute favorite color ... purple.  And then what an adventure Little Miss had looking at all the costumes!  I swear, she must have begged me to buy her at least 10 of them.  Princess Jasmine ... a mermaid ... a butterfly ... a cupcake ... Elsa from Frozen ... and Super Girl ... just to name a few.

She was so excited about all the different costumes, she could hardly contain herself.  So I decided it would be best for us to wait a little bit to decide which one to actually buy.  We didn't want to suffer from costume buyer's remorse now, did we?  No, not at all ... because that would be a bad thing.

But I will say thanks to their big selection of Halloween treats and supplies, our Walmart trip was indeed quite successful at getting us into the Halloween spirit.

Seriously, once this perfect-costume-selection was made, do you want to know what I discovered is even easier than shopping at Walmart for our Halloween supplies?  Shopping at Walmart.com  for our Halloween supplies!

Mmmm hmmmm, with Walmart.com and one or two clicks, our Elsa costume was on it's way to our doorstep without me even needing to leave the couch.  And without breaking the bank, too ... because Walmart.com offers the same great everyday low prices as the store itself.

While I was perusing the girls' costumes online, I also discovered Walmart.com offers a whole bunch of personalized Halloween items, too.  Like personalized trick-or-treat bags ... and fun personalized doormats ... and even monogrammed pumpkins!  Just look at how adorable these are ...

  

Little Miss H. may just be getting a personalized trick-or-treat bag to tote her goodies around in on Halloween night!

And let me just say, this first-time Mom is super glad Halloween costume shopping was so easy!  Thanks to Walmart.com, it was even easier than making these Candy Corn Slab Cookies.

Which is saying a lot ~ because making these Candy Corn Slab Cookies is about as easy as can be.

To whip up a batch of these fun treats, grab a tube of your favorite refrigerated sugar cookie dough on your next trip to Walmart.  Then roll it out on a pizza/baking stone, sprinkle the dough evenly with white chocolate chips and pecans, and bake it for about 20 minutes ...

Once it's baked for the 20 minutes, sprinkle on some candy corn and bake it for 2 minutes more to just barely get the candy corn melty and stuck to the cookie dough.

Let the slab of cookies cool, and then whiz across it several times with a pizza cutter to cut cookie squares.

Easy Candy Corn Slab Cookies
(Printable recipe)
Ingredients
  • 1 (16.5 oz.) package refrigerated sugar cookie dough
  • 1 c. (6 oz.) white chocolate chips
  • 1/2 c. chopped pecans
  • about 3/4 c. candy corn {more or less, to taste}
Directions
  1. Spray a cold baking/pizza stone very lightly with non-stick cooking spray. Roll cookie dough out into roughly a 1/4-inch thick circle onto the baking stone.
  2. Sprinkle cookie dough evenly with white chocolate chips and pecans.
  3. Bake at 350 degrees for 18 - 20 minutes until cookie dough looks almost done.
  4. Remove from oven and immediately sprinkle evenly with candy corn. Return to oven and bake for an additional 2 minutes until candy corn has just begun to melt on some edges.
  5. Remove from oven and cool completely on the baking stone. Once cooled, loosen from the baking stone with a long knife. Cut into squares with a pizza cutter.
Notes:
- These cookies do not work as well when baked on a cookie sheet ... I only recommend baking them on a baking/pizza stone.  When baked on a cookie sheet, they lose their soft, tender texture and come out crispy.  {But hey, if you love crispy cookies, go for it!  You will need to watch them closely as they bake and adjust down the baking time.}
- Be warned ... if the candy corn is left in the oven for much longer than two minutes, it will melt into little puddles of orange goo!

  1. You had me at sugar cookie dough! My niece is going to be Elsa this year. She was also Elsa last year haha. This is a great fit for a party. I like to fill up on the little pumpkins.
