I think since I write The Kitchen is My Playground, it's pretty apparent I love to cook.  I started cooking with my Mom way back about the time I started to walk, pulling up a chair to stand on at the counter and being dubbed the resident stirrer.  I think I was also dubbed the resident spoon licker, too ... a responsibility I loved and took very  seriously.

Even with that love of cooking, there are many times I just don't feel like putting much effort into preparing a meal.  And I would venture a guess that I'm not alone in this.  Right?

For this shrimp and broccoli version, do a quick marinating of the shrimp in olive oil, salt, pepper, and lots of lemon zest.  The lemon zest brings such a zip and freshness of flavor to the shrimp ... it may seem like a large amount of zest, but it's truly delicious, I swear.

While the shrimp marinates, season fresh broccoli florets with olive oil, salt, pepper, and a touch of ground cumin and chili powder.  Spread them on a sheet pan and roast the florets for 10 minutes.

Once the broccoli florets have finished their initial roasting, add the marinated shrimp to the pan and bake for about 10 minutes more.  Remove from the oven and give the whole pan a little squeeze of fresh lemon juice to top it all off.

ingredients:

For the shrimp:
  • 1 lb. large shrimp, peeled & deveined
  • 2 T. extra-virgin olive oil
  • 1 1/4 tsp. lemon zest {zest of one lemon}
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper
For the broccoli:
  • 2 lbs. fresh broccoli, cut into bite-sized florets
  • 3 T. extra-virgin olive oil
  • 1/2 tsp. ground cumin
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 1/8 tsp. chili powder
To finish the dish:
  • juice of 1/2 a lemon

instructions:

How to cook Roasted Shrimp & Broccoli Sheet Pan Supper

  1. Combine shrimp, olive oil, lemon zest, salt, and pepper in a bowl; toss to coat. Put in the refrigerate to marinate while you prepare the remainder of the recipe.
  2. Place broccoli in a separate large bowl. Add olive oil, cumin, salt, pepper, and chili powder; toss to coat.
  3. Arrange broccoli in a single layer on a rimmed sheet pan coated with non-stick cooking spray. Bake at 425 degrees for 10 minutes.
  4. Add shrimp to the pan and toss with the broccoli. Bake until shrimp have just turned pink and opaque, about 7-10 minutes depending on the size of the shrimp. {Do not overcook the shrimp ~ they'll get rubbery.}
  5. Remove pan from oven and squeeze lemon juice over the shrimp and broccoli. Serve immediately.
TRACEY'S NOTES
  1. For extra-easy prep, use packaged pre-cut broccoli florets you can buy in the produce section of the grocery store.
  2. For extra-easy clean-up, line the pan with foil before coating with non-stick cooking spray. After cooking, simply lift off the foil and discard.
