You just can't go wrong with chocolate chip cookies.  And you especially can't go wrong with them when you pair them up with another dessert favorite.  Like brownies ... for Chocolate Chip Cookie Dough Brownies.  Or a dip in chocolate ... for Chocolate Chip Cookie Dough Truffles.

Or how about cheesecake for these super easy Chocolate Chip Cookie Cheesecake Bars?

These bars are one of my favorite go-to easy sweet treats.  Taking advantage of store-bought refrigerated cookie dough, they come together really quickly with minimal effort, taste great, and ... most importantly ... seem to be loved by all.

With a layer of creamy cheesecake sandwiched between two layers of chocolate chip cookies, what's not to love?  Believe me, if you love both sweet treats on their own, you'll love them just as much or more together.

Not a fan of store-bought cookie dough?  You could certainly make a batch of homemade dough to use instead.  Then just roll the dough into a log shape and follow the steps of the recipe as usual.  No problem.

To whip up a pan of Chocolate Chip Cookie Cheesecake Bars truly couldn't be easier.

Simply freeze two tubes of refrigerated cookie dough for about an hour.  Then slice one tube and press the dough slices into the bottom of a baking dish to form a bottom crust ...

Then mix up a simple cheesecake batter, pour it on top of the cookie dough crust, and top with cookie dough slices from the remaining cookie dough tube ...

Bake until the cheesecake is set and the cookies are baked and slightly browned on the top ...

Because seriously, what's better than chocolate chip cookies?  Chocolate chip cookies baked up into cheesecake bars!  Especially when those cheesecake bars are so super simple to make.

Yield: about 20 bars

Chocolate Chip Cookie Cheesecake Bars

Combine two favorites in these totally tasty bars. They're a double dessert delight!
prep time: 15 Mcook time: 35 Mtotal time: 50 M

ingredients:

  • 2 (20 oz.) packages refrigerated chocolate chip cookie dough, frozen for at least 1 hour
  • 2 (8 oz.) packages cream cheese, softened
  • 1/2 c. granulated sugar
  • 2 eggs
  • 2 tsp. vanilla extract

instructions:

How to cook Chocolate Chip Cookie Cheesecake Bars

  1. Coat a 9x13-inch baking pan with non-stick baking spray. 
  2. Slice 1 package of cookie dough into 1/4-inch thick slices. Line the bottom of the pan with the cookie slices, pressing dough together to form a bottom crust that covers the entire bottom of the pan.
  3. In a mixing bowl, combine cream cheese, sugar, eggs, and vanilla extract. Mix until smooth. Pour cream mixture over prepared cookie dough crust.
  4. Slice remaining package of cookie dough into 1/4-inch thick slices. Place slices on top of cream cheese mixture, spacing evenly. Do not press cookie dough slices together.
  5. Bake at 375 degrees for 35 minutes.
  6. Cool completely and cut into squares. Store in the refrigerator.
