Last week's snow storm brought us a tiny bit of snow, and a whole lot of sleet and freezing rain ... which in the South, is even worse than snow.  Sleet and freezing rain mean layers of ice on the roads ... Which also means NObody is going ANYwhere for quite some time.

And that's exactly what happened to us.

The storm resulted in us being home bound for a total of six days.  Six  days.  Waiting for the temperatures and sun to turn warm enough to melt away the imprisoning ice.

So what exactly does one do when home bound for six days?  I don't know about you, but I for one start to go a bit stir crazy.

And then I bake.  Which probably comes as no surprise.

Which is exactly how this rich-and-delicious Marshmallow Chocolate Cake came to be a part of our lives.

Yes, this cake was one of my please-save-me-from-going-stir-crazy baking projects.  And let me just tell you, it is indeed rich  and delicious.

To create this little beauty, start with a boxed Devil's Food cake mix and doctor it up a bit.  Or, you could make a scratch-made cake with your favorite go-to recipe.

Once the cake is baked in a 9x13" pan, smother it with mini marshmallows as soon as the cake comes out of the oven.

Then pour a rich boiled chocolate icing ... {think Texas Sheet Cake-type icing} ... all over the top, sealing that layer of marshmallows in a coating of chocolate deliciousness.

The marshmallows will melt a bit from the heat of the warm cake below, and rich boiled icing above.

Oh, this Marshmallow Chocolate Cake was definitely  worth being snowed in for six days.

Okay, so maybe that's stretching it just a tad bit far ...  This cake is absolutely delicious, but truth-be-told, I still think I'd rather have been able to get out of my house.

Marshmallow Chocolate Cake

ingredients:

For the cake:
  • 1 (15.25 oz.) package Devil's Food cake mix
  • 3/4 c. water
  • 3/4 c. canola oil
  • 4 large eggs
  • 1 (10 oz.) package miniature marshmallows
For the icing:
  • 2 c. granulated sugar
  • 1/2 c. (1 stick) unsalted butter
  • 5 oz. evaporated milk
  • 1 (12 oz.) package semi-sweet chocolate chips {2 cups}
  • 1 tsp. vanilla extract

instructions:

How to cook Marshmallow Chocolate Cake

Prepare the cake:
  1. In a mixing bowl, place cake mix, water, oil, and eggs; beat until well combined. Pour batter into a greased 9x13-inch baking pan. 
  2. Bake at 350 degrees for 30-35 minutes, or until cake tests done with a wooden pick.
  3. Remove cake from oven and immediately pour marshmallows evenly over the top. Set aside.
Prepare the icing:
  1. Place butter, sugar, and evaporated milk in a medium-sized saucepan. 
  2. Bring to a boil over medium to medium-high heat, stirring frequently; boil for 30 seconds.
  3. Remove from heat; add chocolate chips and vanilla extract. Whisk until chocolate chips are melted and icing is thickened and glossy. 
  4. Working quickly, pour over marshmallows and smooth with a rubber spatula. 
  5. Allow to cool completely.

  1. What a delicious idea! I am definitely going to have to give that a try. Ice is worse than the snow. I can't imagine being cooped up for six days. At least that gives you plenty of time to play in the kitchen!

  6. Regarding your marshmallow chocolate cake recipe, I use a brownie mix instead of cake. My mother-in-law's recipe actually calls for a home-made brownie recipe so that it is thick. So good!

    1. Hi, Sandy! Yes, this cake can absolutely be made a day {or even 2} ahead. Just store it tightly covered at room temperature. The marshmallows get 'melty' but not sugary.

  11. This is hands down the best boiled icing recipe I have ever made! I rarely leave comments on blogs, but I had to say something about this icing. It is DELICIOUS - easy to make and the perfect fudgy consistency/texture once it cools! The marshmallows under the icing is also a great idea. I used the marshmallows and icing over brownies. It was glorious.

  12. Hi, I'm stuck with making the icing recipe as I live in England and we don't measure in cups we use grams for weight and Millilitres for liquid volume. So I have several questions: How much does a stick of butter weigh?
    Do you use Evaporated milk or is it condensed (sweetened) and is the measurement you use by weight or fluid oz?
    If you could give me the metric conversions for the icing I would be most grateful?
